My daddy told me, as I arrived home (Nati in tow) to be glad that I simply survived.
And how right he is.

I still need to get myself employed, but for now today, I’m content to have survived my craziest academic quarter yet (and hopefully ever) and be home in my wonderful house with my parents and boyfriend (and animals, of course), with my head above water and still planted firmly on my shoulders.

I have been so so so in and out with meager offerings in my posts on the blog, which is something that irritates me to no end, but which was an unfortunate consequence of working tirelessly on school.

Next quarter will be different.
Also, I have so many ideas for holiday baking and I’m just praying I have enough time to fit them all in during break.

This pie is from Thanksgiving, and it would be an utter shame if I didn’t get this post together whilst we are still in pie season.

This pie is a delicious endeavor and a total showstopper.
It features a gloriously brown and shiny, crackling crust chock full of sharp cheddar cheese and sweet cream butter.
The inside is comprised of layers upon layers of cinnamon-poached pears, soft and sweet, and tart, spiced apples, with more bite and brightness, all lacquered and laced with brown butter butterscotch, a salty, profound, caramel sauce that really takes the pie to the next level.

There are a few components, but three of them (the poached pears, the butterscotch, and the dough) can be made ahead of time and store beautifully, so that when pie day rolls around, you will be prepared and calm and ready to make the most beautiful, bad-ass pie of your life.

When making pie, my best advice is as follows:
Keep everything cool.  Your flour, your butter, your fillings, your mentality.
Read the recipe very well beforehand.  Make sure you have all of your ingredients on hand and prepped.
Relax!  A rustic pie tastes just as good alone with a perfect lattice, and any pie is better than no pie.  People will love you and you should be proud.
Pie will always make you friends.

Apple, Pear, Butterscotch, and Cheddar Pie
makes 1 large pie

ingredients:
for the poached pears:
1 lemon, zested in large strips and juiced
1 stick cinnamon
2 pounds hard pears, peeled, cored and sliced
1 cup white wine
1 1/3 cups sugar

for the pie filling:
2 lb. granny smith and golden delicious apples, peeled, cored, and thinly sliced
juice of ½ lemon
1/3 cup brown sugar
1/4 cup granulated sugar
1 ½ teaspoons cinnamon
1 teaspoon nutmeg
pinch cloves
pinch allspice
pinch ginger
pinch coriander
¼ teaspoon salt
3 tablespoons cornstarch

for the butterscotch:
4 tablespoons unsalted butter
1/2 cup (about 109 grams) packed dark or light brown sugar (I used dark)
1/2 cup (118 ml) heavy cream
1/2 teaspoon flaky sea salt, to taste
1 1/2 teaspoons (8 ml) vanilla extract

for the cheddar pie crust:
360 grams (3 cups) AP flour
1 teaspoon kosher salt
1 1/2 teaspoon cane sugar
170 grams shredded cheddar cheese
170 grams (1 1/2 sticks) frozen butter, grated
1 1/2 teaspoon vinegar
60 to 90 grams ice water

directions:
Make the dough: whisk flour, salt, and sugar together.
Cut and mix the grated cheese and butter until the largest piece is pea-sized.
Add in the vinegar, then sprinkle on just enough ice water so that you can gather the dough into a cohesive mass.
Divide dough into two balls.
Refrigerate 1 ball.
Roll the other ball out very gently into a 12 inch round.
Lightly drape over a pie dish and crimp gently.
Refrigerate or freeze.

Poach the pears: peel, core, and slice the quinces fairly thinly.
Place lemon zest, juice, cinnamon stick, sugar, wine, and quince into a sauce pot on medium high heat.
Bring mixture to a hard simmer, then reduce heat to a bare simmer.
Simmer for 10 minutes, then place lid on pot and allow to cook for 2 hours, stirring occasionally, until the moisture has been mostly absorbed and the quince is rosy toned.
Allow to cool completely.

Make the butterscotch: brown butter in a saucepan.
Add sugar, cream, and salt and whisk to combine.
Bring to a very gently boil and cook for 5 minutes, stirring constantly.
Remove from heat, stir in vanilla, and carefully taste to adjust salt and vanilla.
Allow to cool at room temperature.

To make the pie, toss thinly sliced and peeled apples with lemon juice, salt, and spices.
Whisk sugars together with cornstarch; stir into apple mixture and set aside.
Remove the top portion of the pie dough from the fridge; allow to thaw until it is workable.
Roll out to ¼ inch thickness and cut out shapes or lattices; refrigerate.
Remove bottom part of dough from freezer or fridge.
Place 1 thin layer of pears on the bottom of the pie.
Top with a layer of apple mixture and a drizzle of butterscotch.
Repeat until pie is full.
Top the pie with the lattice or decorations as desired.
Brush with egg wash or cream and sprinkle on turbinado sugar.
Bake at 425 for 10 minutes, then lower heat to 375 and bake for 45 minutes, covering crust if necessary.

Today, I’m crazy busy cooking and baking a feast for my family… I’ve been cooking since I got home on Tuesday night and I won’t stop until dinner tonight!

But nevertheless, I wanted to share this cake with you, since it is so easy and quick and could be a perfect last-minute addition to any holiday table.

For any of you who might be curious, the menu I’ve created for today is as follows (and yes, I execute all of these dishes, with great help from my sous chefs Mom, Dad, and Grandma!):

We don’t play around with Thanksgiving in this household.

I’m going to attempt to perhaps photograph some of the desserts, but no promises.  Things can get hectic!

The cake I’m sharing today is seriously, seriously, the best pumpkin cake I have ever tasted.

Even better, it only requires one bowl, comes together in a flash, and keeps like a dream.
It was inspired by a jar of pumpkin butter that Hana brought me from the apple orchard/pumpkin patch where she spent a brisk autumn morning.
She really is the best big ever!

This pumpkin cake is dairy-free (and I used lactose-free cream cheese for the frosting), but you’d never know it.

Super moist and spicy, thanks to a double hit of pumpkin: both pumpkin butter and pumpkin purée go into the batter, along with a hit of brown sugar and a mélange of spices.
The frosting is creamy, drippy, and thick—slathered on generously.
I used Green Valley lactose free cream cheese to keep it Nati-friendly—it’s seriously amazing!
You cannot tell the difference in taste or texture whatsoever.

This cake batter comes together in 10 minutes, and then you can sneak it in the oven next to the turkey—a loaf pan is quite svelt, even in a crammed oven.

It would make a fantastic last addition to any menu!

Double Pumpkin Cake 
makes 1 9×5 inch loaf cake
cake portion adapted from Sweet Phi

ingredients:
for the cake:
180 grams ( 1 1/2 cups) flour
55 grams (1/2 cup packed) brown sugar
55 grams (1/2 cup) sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
pinch cloves
pinch nutmeg
3/4 teaspoon kosher salt
2 eggs
270 grams (1 cup) pumpkin purée
430 grams (1 1/2 cups) pumpkin butter
28 grams (2 tablespoons) vegetable oil
1 teaspoon vanilla extract

for the frosting:
8 ounces cream cheese (I used lactose free)
1/4 teaspoon kosher salt
480 grams (4 cups) powdered sugar
1-2 tablespoons milk, as needed (I used cashew)

directions:
Make the cake: preheat oven to 350 degrees F and grease and flour a loaf pan.
Whisk together flour, sugars, spices, and salt.
Make a well in the center and crack in the eggs; add the pumpkin purée, pumpkin butter, oil, and vanilla to the well also.
Carefully stir the batter together until a rough and mostly homogeneous batter results.
Scrape into prepared pan.
Bake for 45 minutes to 1 hour, or until a tester comes out with only a few moist crumbs and the top is springy and golden.
Allow to cool completely before frosting.
To make the cream cheese frosting, whip cream cheese on high speed util creamy and no lumps remain, about 3 minutes.
Add in the salt and powdered sugar and stir until completely incorporated; if mixture is too thick to spread, add the milk until it is of spreadable consistency.
Frost as desired.
Serve at room temperature.

The French, in their effortless elegance, make a difference between kitchen and bathroom sinks.
Un évier et une lavabo.

They draw the line at owl’s ears: ones with visible ears are les hiboux, while ones without are les chouettes.
There are three words for frost, seven for ice.
Five for window, four for wall.
There’s even a phrase in French for the phenomenon of the urge to jump off of tall buildings/cliffs/balconies/heights:
l’appel du vide.
(Literally: call of the void.)

There are other nuances threaded into the language that make translation tricky; this is one of the most fascinating parts of non-native languages, I think.
Idioms and untranslatables that might confuse anyone hearing them for the first time.

OMgomgomg. Michelle made brown butter pumpkin cinnamon rolls with crème fraîche glaze and they are so fluffy and beautiful I am seriously losing my mind.

These ultra healthy sugar free apple, almond, and buckwheat muffins from Green Kitchen Stories look so comforting (that applesauce center wooooow) and I want to eat 3 for breakfast like, right now, please.

On the savory side, stew is my favorite kind of meal.
Customizable, easy, makes leftovers.
I gravitate towards middle Eastern flavors (za’atar is my go-to spice blend) when I’m cooking, and this squash and bean stew over brown rice is my idea of a perfect fall meal.
Side note: I really want SK’s Bowl + Spoon because, like I said, that’s the kind of cuisine/meal that just gets me.

Last one: drooling over this dutch apple pie with muscovado toffee sauce.  Crumbly and salty-sweet and layers upon layers of apple drenched in toffee sauce…
I am quite partial to a good apple pie.

Where to start with this carrot cake…

First of all, it is remarkable how well the mélange of ingredients mesh in this cake.
The sheer number of mix-ins might make one wary, but you absolutely must trust me, because the resulting cake is nothing short of phenomenal.

It is exactly how I like my carrot cake: moist, dark, spicy, fruity, and chock full of little surprises in each bite.
And lots and lots of carrot!

The cake is healthier than most carrot cakes, which are always touted to be calorie bombs in disguise.
The amount of refined sugar is drastically reduced by using coconut sugar, which is dark and a little smoky tasting.  It lends the cake an extra deep, caramel flavor.
The cake itself is dairy free, with MCT-rich coconut oil standing in for butter.

The frosting has a cracked, shiny, swirly top.
It’s lusciously rich on the tongue, with butter and brown sugar creating an extremely rich caramel flavor.
It’s good while soft and melty and fantastic when cold, which firms it up into a fudgy consistency.
It’s a rich frosting to pair well with the dense, moist cake beneath.  A wimpy frosting would have no impact and no chance of competing with the cake.

The cake is filled with grated carrots and apples for earthiness and a firm bite; coconut sugar and flaked coconut add a whisper of the tropics and a hint of caramel and smoke; candied ginger and a pinch of cinnamon, nutmeg, and cloves add a spicy note; juicy golden raisins are sweet and unexpected; finally, toasted chopped walnuts give an ever-so-slight bitter nuttiness to each bite.

The frosting deserves a whole host of adjectives of its own.
This is seriously the best frosting of this sort (spread over warm sheet cake) I have ever in my life tasted or imagined.
Unlike the cake, it is in no way healthified.

It’s made of copious amounts of butter and brown sugar, and is literally liquid fudge that is spread over the warm cake and then allowed to set into luscious, creamy goodness.
It’s sweet and salty and a little caramel-esque, with a crunchy, shiny top layer and a buttery center below.
I want to spread it on every single sheet cake I ever make.
This would be incredible with applesauce cake, or chocolate cake, or caramel cake, or coconut cake… or a spoon, or cardboard.  You get the point.  It’s good.

Kitchen Sink Carrot Cake with Brown Sugar Fudge Frosting
makes 1 9×9 inch cake
frosting adapted from KAF

ingredients:
for the cake:
2 eggs
100 grams (1/2 cup) granulated sugar
75 grams (1/4 cup plus 2 tablespoons) coconut sugar (or brown sugar)
170 grams (3/4 cup) coconut oil, melted
1 teaspoon kosher salt
120 grams (1 cup) flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves
200 grams (1 1/2 cups grated) carrots
2 small granny smith apples, grated
1/2 cup toasted chopped walnuts
1/2 cup shredded coconut
1/2 cup candied ginger, chopped
1/2 cup golden raisins

for the brown sugar fudge frosting:
100 grams (7 tablespoons) butter
130 grams (2/3 cup) brown sugar
1/4 teaspoon plus big pinch kosher salt
60 grams (1/4 cup) milk
275 grams (2 1/4 cup) confectioner’s sugar

directions:
Make the cake: preheat oven to 350 degrees F and grease a 9×9 inch pan; line with parchment and grease the parchment as well.
Whisk eggs, sugars, oil, and salt together until homogeneous and light in color.
Add the flour, baking powder, baking soda, and spices on top.
Fold in until halfway incorporated, then add the grated carrots and apple on top and fold until completely uniform.
Stir in walnuts, coconut, raisins, and candied ginger.
Pour batter into prepared tin and bake for 30-40 minutes, until a tester comes out with a few moist crumbs.
Allow to cool while you prepare the frosting.
Make the frosting: melt butter, brown sugar, and salt together until completely incorporated.
Whisk in the milk and powdered sugar until a thick frosting comes together.
Allow to cool for 5 minutes, then spread over the partially cooled cake, swirling with a palette knife as desired.
Serve cake room temperature or slightly chilled for denser cake.

So, these cookies.  I made a lot of them.
I baked off 5 or 6 sheets of them one night, covered them up nice and tight, and the next morning, settled down with piping bags, a #1 tip, and the Lord of the Rings (duh).
Unfortunately, I left all of my cookie decorating stuff at school, so I literally only had 1 pastry tip and 3 pastry bags, to last me through 5 colors (plus flooding!) and around 75 cookies.

It took me 5 hours to decorate all of these cookies, and now they are under lock and key so that no one eats them.
These are not for my family to eat.  They are for gifting, so that people nicer than us can enjoy them.
Just kidding!!!!  Kind of.  I’m a little loath to see them go.

The two types of cookie that you see here are dark chocolate and honey spice.

The chocolate dough bakes up buttery and crisp, with crunchy edges and a slightly salty, very chocolaty bite.  They are, in short, the most perfect chocolate sugar cookies I’ve ever made.  The deepness of the cocoa is complimented by the sweet royal icing.

The honey spice cookies puff up a little when baked but dry out and get very crunchy-crispy as they cool.
They’re a cross between a regular sugar cookie and a gingerbread cookie; lighter in color but still spicy.  Heaps of ginger, cinnamon, and cloves go into the dough, along with a touch of honey that rounds out the sweetness.
(To be honest, they taste a lot like graham crackers to me.  Which is a good thing, people.)

You can use royal icing made of meringue powder (follow the instructions on the can!) or do what I did, in a pinch, which is use plain old egg whites to get the job done (not if you avoid raw egg, however).  I actually prefer egg white royal icing because it seems to bubble less.  That’s just personal taste, though.

Decorated cookies come out differently for everyone.  There’s a big learning curve—I certainly have experienced it (and my cookies are still far from perfect).

Part of the fun, however, is in designing your cookies and getting down and dirty in the icing.  The end product doesn’t matter that much—people will love and appreciate them (as long as they taste good!).
So, I’m leaving you with the recipes for the two types of dough, which are both guaranteed to taste good, and the royal icing.
The rest is up to your imagination!

Dark Chocolate and Honey Spice Cookies | La Pêche Fraîche

Dark Chocolate Roll-Out Cookies
adapted from Sweetopia
makes approximately 35 2-inch cookies

ingredients:
1 cup (225 grams) butter, softened but cool
1 cup (200 grams) sugar
3/4 teaspoon kosher salt
1 egg
2 teaspoons vanilla extract
2 cups (250 grams) flour
3/4 cup (90 grams) dark cocoa powder

directions:
Place butter in the bowl of a stand mixer fitted with the paddle attachment; beat on high for 4 minutes.
Scrape the bowl and add in the sugar; beat for 3 full minutes.
Scrape the sides of the bowl and add the salt, vanilla, and egg; beat for 5 minutes until very, very fluffy and light.
Scrape the bowl and add in the flour and cocoa powder; stir until the dough is homogeneous.
Place the dough in the fridge for 30 minutes, wrapped well in plastic wrap.
To roll it out, flour a clean surface lightly.
Roll the dough out to 1/4 inch thickness and cut out cookie shapes.
Collect and reroll scraps.
Place cookies on sheet pans lined with parchment and freeze for at least 1 hour and, wrapped very well, up to 2 weeks.
To bake, preheat oven to 350 degrees F.
Bake cookies straight from the freezer, for 12 minutes.
Allow to cool for 5 minutes on the sheet pan, then remove to a wire rack to cool completely.

Honey Spice Roll-Out Cookies

makes approximately 35 2-inch cookies

ingredients:
3 1/4 cups (405 grams) flour
1/2 teaspoon baking soda
1/2 cup plus 2 tablespoons (140 grams) butter, softened but cool
1/2 cup (100 grams) brown sugar
3/4 teaspoon kosher salt
2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/4 teaspoon allspice
1/4 teaspoon cloves
1 egg
1/2 cup (110 grams) honey
1 teaspoon vanilla extract

directions:
Stir flour and baking soda together.
Place butter in the bowl of a stand mixer fitted with the paddle attachment; beat on high for 4 minutes.
Scrape the bowl and add in the sugar, salt, and spices; beat for 3 full minutes.
Scrape the sides of the bowl and add the egg; beat for 5 minutes until very, very fluffy and light.
Scrape the bowl and add in the honey and vanilla extract; mix well.
Add in the flour mixture and stir until the dough is homogeneous.
Place the dough in the fridge for 30 minutes, wrapped well in plastic wrap.
To roll it out, flour a clean surface lightly.
Roll the dough out to 1/4 inch thickness and cut out cookie shapes.

ingredients:
2 egg whites
pinch salt
3 cups (330 grams) confectioner’s sugar, sifted
1 teaspoon water, and as needed

directions:
Whip egg whites and salt until foamy.
Sift confectioner’s sugar over egg whites and beat until smooth.
Add in water as needed to get desired consistency (check out Sweet Sugarbelle).
Tint as desired, and go to town!

It must seem as if I’ve fallen off the face of the earth, or dived to the depths of the sweet, cold ocean only to resurface, gurgling and apologetic, every fortnight.

Autumn has blown right past this blog.
Thanksgiving is right around the corner, WHAT!?
It’s not that I don’t have things to complain about, good lord you know it’s not, but that I don’t have time to type up my complaints.

Far easier to light a few million candles and wallow about when given a moment of free time.
Actually, most of my free time is spent doing more work. (Note: this definition of “free time” only applies to UChicago students.)
Yes. Yes indeed, I’m ready for Thanksgiving, people.

Sometimes I feel guilty for setting certain things aside while my life continues on its hectic hurricane path.
Plenty of people juggle it all, balancing this or that on all ten fingers and their nose, too. (see: This poor puppy.)

But I’m not them. And for me, trying to stay on top of things in one part of my life means sacrificing in other places.
I promise this space will never be my sacrificial lamb.
I will always come back.
I promise to bring good food and real talk and always, always love.

I’m jumping back on the pumpkin bandwagon.
It’s been far too long, and I’ve been eating pumpkin pancakes too often to not share a treat here of the same nature.

This is a great cake for the hollydaze.
It’s easy easy easy, and saves marvelously.

Dairy Free Pumpkin Bundt | La Pêche Fraîche

Dairy Free Pumpkin Bundt Cake with Lemon Glaze
cake portion adapted from Taste of Home
makes 1 10-cup bundt plus 3-4 muffins

ingredients:
for the cake:
170 grams (1 1/2 sticks, 6 ounces) Earth Balance butter
60 grams (1/4 cup) coconut oil
500 grams (2 1/2 cups) sugar
1 teaspoon kosher salt
3 tablespoons molasses
1 1/2 teaspoons cinnamon
1/2 teaspoon ground cloves
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
3 eggs
420 grams (15 ounces,1 standard can) pureed pumpkin
360 grams (3 cups) flour
2 teaspoons baking soda

for the glaze:
zest of 1 lemon
juice of 1 lemon (~3 tablespoons of juice)
tiny pinch salt (1/16 of a teaspoon)
1-2 cups confectioner’s sugar, or as needed

directions:
Make the cake: preheat oven to 350 degrees F and grease and flour a 10-cup bundt pan very well (you may want to have some muffin liners in a muffin tin as well, for extra batter).
Place Earth Balance and coconut oil in a stand mixer fitted with the paddle attachment and beat on high for 3 minutes.
Scrape the sides of the bowl and add sugar, salt, molasses, and spices.
Beat for a full 5 minutes on high speed.
Scrape the sides of the bowl and add the eggs.
Beat for 3 more minutes, until very fluffy, light colored, and smooth and shiny.
Stir in the pumpkin part-way (leave some unmixed).
Place the flour on top of the batter, then the baking soda on top of the flour; mix on low speed to combine.
Scrape the sides of the bowl to ensure the batter is homogeneous, then mix for 1 more minute.
Pour into prepared pan, scooping extra batter into the muffin tin.
Bake for 60-70 minutes, until a tester comes out completely clean (the muffins will be done in 18-20 minutes, so check on them early).
Allow cake to cool for 10 minutes, then turn out of its pan onto a cooling rack.
Meanwhile, make the glaze.
Zest a lemon into a bowl, then get all the juice out of it that you can.
Add the salt and begin adding the powdered sugar 1/4 cup at a time, while whisking to prevent lumps.
The glaze should have a thick consistency, similar to honey or molasses.
Add powdered sugar as necessary to reach this consistency (if you go too far, add 1 tablespoon very hot water and whisk), then use a spoon to pour over the barely-warm cake.
Allow cake to fully cool and glaze to set.
Serve at room temperature.

I thought I’d share some things that I’m loving and coveting right now.  Some hover on the edge of the seasons, some I share with autumnal intent, and some for plain old adoration.

First off, I cannot stop listening to “I’m Not the Only One.”
It’s been on repeat for 2 full days.
Sam Smith gets me and my current life mood, and this song is soothing but oh-so-sad.
It’s incredibly refreshing to hear his beautiful Adele-man-voice singing something other than “Stay With Me” or “Latch.”

I finally (!) read Gone Girl by Gillian Flynn. Oh!!!!
It was utterly fantastic. I picked it up and didn’t put it down until I finished, 24 hours later.
The attention she pays to details, her nuanced plot implications, and realistic emotional touch add up to quite an addictive read.
And OMG I can’t wait for the movie.

I reallyreallyreallyreallyreally want to read The Hedge Knight (AKA the tales of Dunk and Egg) by GRRM to bide my time until the next GoT book (2015?!?! REALLY?!) but have discovered that it costs $100+ dollars to buy a new copy.
I may have to settle for the kindle version, which is inferior in my humble opinion. Give me a crackling spine and sweet, faintly musty paper pages any day.

I love the Hunter “Iconic Red” collection, but I really have my eye on some tall black wellingtons.  I have the olive green ones and absolutely adore them, and I think black can only be more versatile!
(Although since I intend to buy these gorgeous black boots in the next few weeks, red wellingtons could be just the ticket to keep my boot collection from looking too monotonous…)

I bought a pair of Lululemon 4-way stretch running shorts about a month ago, and I am about ready to throw out all my “norts” and invest in 4 more pairs of these babies.
They’re fitted without being clingy, so they don’t ride up or stick to you in weird places; they’re stretchy and comfortable, lightweight, and don’t cut in at all at the hips.
I hate having to adjust my clothing in the middle of a workout, which is the main reason why I fell for lulu leggings.  Now, I fear also been converted to their sport shorts…

This bag shall be mine, as soon as it goes back on sale (as Jessica pointed out, Rebecca Minkoff is always on sale).
I have a similar bag (white python, gold hardware) but it’s irritatingly large and due to its poor quality, stained from my blue jeans.  Can’t wait to get rid of it and replace it with a mini Mac!

In the realm of bags, I am coveting this Céline.

I have more links to share, but I don’t want my varied obsessions to be too long-winded, so I’ll save them for another link love post.
(Although by then I’ll inevitably have racked up another impressive list of randoms…)

Let’s chat about this here cake, y’all.

It started out as a spiced applesauce cake with a heaping ton of streusel on top, but in the heat of the oven, the top of the cake buckled in and ate much of the streusel—when I pulled out the loaf, the top sported an eighth of the original amount of streusel.
I figured it would mostly just melt into the batter, no big deal.

However, something far, far better happened:
a pocket of molten streusel, basically a little river of caramelized sugar and butter with a heavy hit of salt, aka the stuff of dreams aka pinch-me-am-I-dreaming-deliciousness, formed right in the center of the cake.

The parts of the cake that retained their streuseled top (mostly the edges) were, just as expected, pleasantly moist with a lovely crunch on top.
So, if your streusel doesn’t sink through the cake, don’t worry.  Either way produces a gently spiced, super moist cake that offers a faint suggestion of apples and fall.
Either way, however, you neeeeed to add this glaze.
It’s my go-to: maple syrup, brown butter, salt, a touch of cream. UGH. Could eat with a spoon.

I snuck one two pieces of this cake before I wrapped it up and gave it to my bestfriendinthewholeworld, Gwen.
It’s perfectly comforting, well-suited for stressed out students!
Like a hug in cake form.
It’s a bomb way to start off fall baking—warm and spicy, but decidedly not pumpkin.

(I’m so not ready for that yet.)

Brown Butter Applesauce Cake
cake portion adapted from Averie
streusel portion adapted from Smitten Kitchen
makes 1 9×5 loaf

ingredients:
for the streusel:
5 tablespoons flour
1/2 cup granulated sugar
1 teaspoon cinnamon
1/4 teaspoon kosher salt
4 tablespoons unsalted butter

for the cake:
1/2 cup (8 tablespoons) unsalted butter
3/4 cup granulated sugar
1/4 cup packed brown sugar
1 teaspoon kosher salt
2 teaspoons cinnamon
1 teaspoon ground ginger
1/4 teaspoon nutmeg
1/8 teaspoon cloves
1/8 teaspoon ground coriander (optional)
2 eggs
1 tablespoon vanilla extract
1 cup unsweetened applesauce
1/4 cup sour cream
1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder

for the brown butter maple glaze:
2 tablespoons butter
1/4 teaspoon kosher salt
1 tablespoon maple syrup
1/2 – 3/4 cup powdered sugar
1-2 tablespoons heavy cream

directions:
Preheat oven to 350 degrees F and grease and flour a 9×5 inch loaf pan.
Make the streusel: combine all of the ingredients and pinch with your fingers until the mixture resembles coarse crumbs, set aside.
Make the cake: place the sugars, salt, and spices in a large bowl. Brown the butter in a skillet, then pour it over the sugar mixture.
While whisking, add in the eggs and vanilla extract; whisk until combined, then stir in the applesauce and sour cream.
Whisk together the flour, baking soda, and baking powder, then stir into the batter until homogeneous.
Pour the batter into the prepared loaf pan, then sprinkle the streusel on top.
Bake for 55-65 minutes, until a toothpick comes out completely clean (you can tent it with foil if the top browns too quickly).
Remove from the oven; while the cake is cooling, make the glaze.
Place butter in a small skillet and brown; remove from the heat and add stir in the salt and maple syrup.
While whisking, add in the powdered sugar, then add heavy cream to thin it to a pouring consistency (if you add too much cream, you can add in a little more sugar to balance it out).
Pour/drizzle the warm glaze over the slightly warm cake, then leave to cool completely.
Serve in thick slices with strong coffee.

Raise your hand if you’ve ever felt personally victimized by carrot cake.

Carrot cakes are (generally) overly sweet and fatty.
Cloying sugar covers up the rich earthy undertones of the carrots.
Oil is added until the batter is slick and shiny, and when baked, greasy.

On top of this, a thick, sugared crust of cream cheese frosting, which is literally just fat and pounds of icing sugar.

Too much sugar and too much fat—not that anyone is really under the impression that traditional carrot cake is intended to be healthy, but there is such a thing as too much of a yummy thing.

Carrot cakes have all the potential in the world, and too often they fall painfully short of delicious.

Carrots, after sugar beets, have the most natural sugar of any vegetable.  As root vegetables, this sweetness is accompanied by a rich, round earthiness and, when cooked, a pleasant chewiness.

A whole pound of them form the base of this cake, shredded into tiny threads that all but disappear, leaving a moist, coarse crumb.

Carrots are accompanied by nutty rye flour, sweet, buttery pecans, round coconut oil and peppery olive oil, and shredded coconut that melts into the finished cake.

I reduced the sugar and oil in this recipe, replacing the standard canola oil with olive and coconut and taking the sugar down by 1/4.
Both are supplanted by a mashed up banana, which gives body and sweetness in a more wholesome way.

This adds up to a carrot cake full of textures and flavors, without the slick of oil and heaps of sugar.
It’s carrot cake, but better.
It’s a touch more healthy, but that’s not the point—the point is to make this cake more respectable, more complex.

Take back carrot cake, people.

IMG_1375_01After reducing the amount of sugar and fat in the cake itself, I made a batch of cream cheese frosting that was on the smaller side, and much less sweet than the standard.
In order to be able to not add 1 1/4 POUNDS of powdered sugar to the frosting, I add in powdered milk, which adds body and extra flavor without the cloying sweetness.

This gets spread in a thin layer all over the cake, making it look a little naked but still pretty, IMHO.  Most of the frosting is saved for the top, and it doesn’t crust over with sugar, but remains creamy.

Words have escaped me when I sit down to write, lately.
I don’t have much to complain about say.
I suppose I don’t feel much inspired by my life of late—not that it’s boring, but it is rather relaxed and quiet—and it leads me to be quite quiet on the blog.
I realize that many of you don’t come for the words, so I am deciding that whether they flow or not, I shall share the recipes and photos that I have in my (long) backlog.

Rye Carrot Cake
adapted from Dorie Greenspan
makes 1 4×8 or 3×9 inch layer cake

ingredients:
for the cake:
1 cup all-purpose flour
1 cup rye flour
2 teaspoons baking powder
2 teaspoons baking soda
1 scant pound carrots
1 cup chopped pecans
1 cup desiccated coconut (sub shredded coconut)
1/2 cup raisins (optional)
1 1/2 cups sugar
1 teaspoon kosher salt
1/4 cup plus 2 tablespoons olive oil
1/4 cup coconut oil
1 medium banana, mashed
4 large eggs
2 tablespoons maple syrup

for the cream cheese frosting:
12 ounces (1 1/2 packages) cream cheese, softened
6 ounces (1 1/2 sticks, 12 tablespoons) butter, softened
pinch kosher salt
1 cup dry milk powder
1 1/2-2 cups confectioner’s sugar

directions:
Make the cake: preheat oven to 350 degrees F and grease and flour 4 8-inch round baking pans.
Stir flours, baking powder and baking soda together.
In a food processor with the finest shredder attachment disk or with a cheese grater, shred the carrots as finely as you can; set aside.
Whisk sugar, salt, oils, and banana together very briskly, until completely combined and smooth.
Beat in each of the eggs and the maple syrup; whisk until completely smooth.
Add in the dry ingredients and carrots and stir to combine; when almost combined, add in the pecans, coconut, and raisins.
Scoop even amounts of the batter into the pans and smooth out with a spatula or butter knife.
Bake for 40-45 minutes, until a tester comes out clean and the tops of the cakes are springy to the touch.
Remove from oven and allow to cool for 10 minutes; turn out of pans and allow to cool completely.
Make the frosting: beat butter on high speed until softened and almost white, about 5 minutes.
Add in the cream cheese and salt and beat for 3 more minutes, until completely homogeneous.
Sift the powdered milk and powdered sugar over the mixture in 4 parts, beating on high speed for 1 minute between each addition.
Scrape the sides of the bowl and beat for another minute; taste for sweetness.
To assemble the cake, spread 1/3 cup frosting between each layer and thinly frost the sides; use the remaining frosting to coat the top in a thick layer.
Serve at room temperature.

Slump, Grunt, Buckle

Despite their stupid names, these kind of desserts are delicious, and what’s more, crazy easy and fast.
Perfect when you need a quick fix of warm, cozy dessert. (Which, in my case, is 24/7.)

Chop up seasonal, fresh fruit (it can even be a little underripe.  We don’t judge here.) and toss it with some sugar, salt and flour/cornstarch.
No need to measure, just go with your heart by taste.
Top it off with buttery cookie crumbs (I wish my whole life were topped with buttery cookie crumbs) and bake it.
SO EASY GUYS WHY AREN’T WE ALL DOING IT?!

This is the best crisp I have ever tasted. Ever.
I’ve made it a few times, in a few different forms.
The first time, about 3 years ago (is 2011 really 3 years ago?! Have mercy.), I baked it in a big heavy dish, and served it with vanilla ice cream.  I was blown away.
In fact, I was so impressed that I then made it into a crumble pie (think dutch apple pie).  The pie was good, but, can I be honest, people?  It was more work.  And the best part was the filling and topping anyways.  So I do not advocate the pie version.  It’s fussier and not worth it.  Keep it simple, stooopid.
And now, I’ve made it into tiny little individual crisps, so you don’t have to think twice about eating four.

For once in my life, I’m not exaggerating.  Seriously. Best crisp I have EVER. HAD.
Sweet and juicy from the pears, tart and punchy from the cranberries, and spicy and rich from the buttery gingersnaps.  
I’ll never look at plain pear crisps the same way.  There’s no going back once you try this combo.
Read: try this combination.  For your own sake.

Okay, time for an explanation about these mini crisps/crumbles/whatever you want to call them.

Other than being delicious, they are dead simple.

I didn’t use a recipe.  Here’s what I did:

peel, core, and dice a couple d’anjou pears
toss ’em with lemon juice, a couple tablespoons of sugar and flour, and some fresh cranberries
throw a bunch of gingersnaps into my food processor and grind them into crumbs
add a hefty pinch of pepper, ginger, brown sugar, and salt
melt some butter and pour it in until the crumbs get clumpy
dump the fruit into serving vessels, top with a shit ton of gingersnap crumb stuff
bake until bubbling and burbling
eat
eat
eat.

Pepparkakor are Swedish ginger cookies, kin to gingersnaps.
They’re traditional Christmas cookies, and are actually popular all over northern Europe.

They’re crispy, crunchy, and lightly spiced.
Made with sweet, sticky golden syrup, plenty of ginger and cloves, a touch of black pepper, and heaps of butter.

The ideal Christmas cookie!
Here, I’ve decorated them with lemony royal icing in a variety of patterns.
The traditional shapes for pepparkakor are pigs, hearts, and men and women (little gingerbread men!).
Unfortunately, of these I only had hearts.  (And two donkeys?!? Didn’t think that was quite appropriate…)

Classic Pepparkakor
adapted from Cottage in the Oaks
ingredients:
3/4 cup (6 ounces) butter
3/4 cup sugar
1 teaspoon ground ginger
pinch ground black pepper
1/4 teaspoon cinnamon
1/8 teaspoon ground cloves
pinch ground coriander
1/8 teaspoon ground nutmeg
pinch allspice
1/2 teaspoon kosher salt
1 egg
1 teaspoon vanilla
1/2 cup (6 ounces) golden syrup
2 cups bread flour
1 cup all-purpose flour

directions:
Cream butter for 2 minutes to soften.
Add in the spices and sugar and cream for 3 more minutes.
Scrape the bowl and add the egg and vanilla and cream for 2 more minutes.
Scrape the bowl and add the golden syrup.
Beat until well combined, about 1 minute.
Scrape the bowl and add the flours.
Mix on low speed until a dough forms.
Knead once or twice, then wrap well in plastic wrap and refrigerate for at least 30 minutes.
Roll out dough to 1/4 inch thickness on a well-floured surface and cut shapes as desired.
Place on baking sheets and refrigerate for 15 more minutes.
Preheat oven to 350 degrees F.
Bake cookies for 7-10 minutes, depending on desired level of crispness.
Let cool, then ice with lemon royal icing, recipe below.

Lemon Royal Icing
adapted from Bridget of Bake at 350
ingredients:
3 tablespoons lemon juice
3 tablespoons cold water
4 tablespoons meringue powder
1 teaspoon corn syrup
12 ounces (3/4 pound) powdered sugar

directions:
Place lemon juice, water, and meringue powder in the bowl of a stand mixer; whip on high until stiff peaks form.
Add the corn syrup and beat until incorporated.
Sift the powdered sugar over the meringue and beat until a uniform frosting forms.
Add water a teaspoon at a time to thin to desired piping/flooding consistency.
