It’s been a bit quiet around here, unusually so.  Have you missed my whining?
Probably not.

But I’m back anyways!  Sort of.

Finals are over!  I can now melt into a puddle of delicious laziness; I can and I promptly will.
Lord, does it ever feel good to relax.

I’m on vacation for spring break.
No, not an SBK2014-rage-your-face-off-throw-up-on-the-beach-by-day-club-hop-by-night type vacation, but a quiet, revitalizing trip.
(The former isn’t quite my style or speed, in case you hadn’t realized.)

I’m in Mexico, having an utter blast and seriously luxuriating in the heat.
I plan on getting tan (sorry mama!) and drinking a lot of piña coladas (not sorry), exploring the beach and eating a ton of fruit.
(Also, Netflix.  Currently watching Pirates of the Caribbean.  Um, Orlando Bloom.  Swoon.)

All in all, this is shaping up to be a swell break.

Since I’ve now forced my happy, warm, tropical vibes into your mind, I’ll share some with you, in the shape of a delicious cake.  Huzzah!

This cake is wholly dairy-free, and could easily be made vegan with a flax egg or egg replacer and vegan chocolate for the frosting.
This cake is part whole wheat, and is chock full of good fats from the coconut and macadamia nuts.
Coconut comes in three forms: oil, meat, and milk.

Sweet bananas, creamy coconut, buttery macadamias, nutty whole wheat flour, rich, dark chocolate.

This is a one bowl cake, with an ideal texture for banana cakes: a good bite, moist and sweet, but not mushy or cloying.
The frosting is not sweet at all, and adds good bitter notes to the dessert.
This is a winner, for sure.

Some notes on the recipe:
Use brown, brown, nasty looking bananas.  The browner, the better.  Brown, spotty, mushy ones will be sweeter and more flavorful in the finished product, though they are gross eaten out of hand.
This is because the sugars have begun to break down, creating flavor and scent molecules which enhance the cake.

You can use 1 can of full-fat coconut milk for this recipe; refrigerate it overnight and scrape off 1/2 cup of the thick cream at the top for the ganache, then whisk the rest together and measure out 3 tablespoons of this milk for the cake.
Scraping the cream for the ganache is the same procedure as making coconut whipped cream; here are two good tutorials— just skip the whipping part.

You can easily use sweetened flaked coconut in place of the desiccated, if that’s all you can find.  Use a little over 1/2 a cup to get the same amount of flavor.

Feel free to leave the macadamia nuts out; I think they add a lovely tropical flavor, but some people don’t like them.

You can use a mixture of semi-sweet or bittersweet chocolate, but definitely don’t use milk chocolate.  It will be too sweet.

Tropical Coconut Banana Cake
cake portion adapted from The Galley Gourmet
makes 1 8×8 inch cake

for the cake:
4 ounces (approximately 1/2 cup) coconut oil, solid
1 cup granulated sugar
1/2 teaspoon kosher salt
1 extra large egg, at room temperature
3 medium bananas, mashed
3 tablespoons coconut milk
1 teaspoon pure vanilla extract
1 teaspoon apple cider vinegar
2 tablespoons cornstarch
1 cups plus 2 tablespoons white whole wheat flour
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup macadamia nuts, roughly chopped
1/2 cup desiccated coconut

for the ganache:
1/2 cup coconut cream
5 1/2 ounces of semi-sweet chocolate, finely chopped

directions:
Preheat oven to 350 degrees F.
Grease and flour an 8×8 inch pan.
Place coconut oil, salt, and sugar in the bowl of a stand mixer and beat on high for 4 minutes, until fluffy and light.
Scrape the bowl and add the egg; beat for 3 more minutes.
Scrape the bowl and add the mashed bananas; mix slowly just to start to incorporate the bananas.
Add in the coconut milk, vanilla, and vinegar and stir once or twice to start to incorporate the wet ingredients.
Dump the flours on top, then the baking powder and baking soda on top of that.
Mix on high, starting slow and working up, until batter is completely homogeneous.
Stir in coconut and macadamia nuts.
Spread batter into prepared pan and bake for 35-40 minutes, until a tester comes out clean.
To make the ganache, heat the coconut cream until bubbling, then pour over chopped chocolate.
Whisk (or blend with an immersion blender) until shiny and smooth.
Allow to cool until spreadable, then frost cake.
Allow ganache to fully set before cutting cake.

It’s pretty hard to go wrong with bananas, brown butter, chocolate, buttermilk, and cream cheese.

Impossible, actually.  You could probably smush them all up and stick them in the microwave and it would taste good.
(Ugh. Banana mug cake?!?!?)

I bought myself one!
After the horrors of 7th week (1 paper, 2 midterms, 3 p-sets and no sleep) I decided I was deserving.  Ahem.

But, y’all, let me tell you: I am bad at ebay.  I do not do ebay good.

I lost 4 (four!) auctions for various 17-55 mm f2.8 USM Canon lenses.

I had fallen into a pit of despair (FWP), when suddenly, I noticed a new BUY IT NOW lens and I jumped out of my seat and my pants and bought the damn thing.

I promptly put my pants back on and sat down
but nevertheless, my excitement was not dampered.

The lens came super quickly (it only took the weekend to arrive!) and I was stunned.

It’s really a beaut; there is so much glass!  I’m unused to that, and I find it truly gorgeous.

It makes my camera look gigantic, yes, but ooooo mami that depth of field will getcha!
Compared to my lil’ eensy kit lens (which I still and will always love.  It’s got sentimental value, okay?  Sentimental value and no lens cap.  Oops.), this thing is a giant monster princess who will be treated with love and care and kept safe.

Very safe.  (She says as she smudges glaze all over it.)

Obviously, I was very excited to bake something and take photos of it with my new toy.
Obviously, knowing me, I was going to choose something I hate photographing.

Whyyyyy am I so stubborn and ridiculous?

I hate bundt cakes.  Wait, no, I hate photographing bundt cakes.  We’ve been through this.  I’m bad at it.
And yet, I baked a bundt cake. Hmph.

This cake, doe.
It is a never fail.  I have made it so many different ways, and have yet to be displeased.
This is my favorite adaptation.

First, I brown half the butter.  Half is creamed until light and fluffy, and then its nutty, flavorful, melted partner gets poured in.
The result?  All of the benefits of the brown butter with an accompanying light and fluffy crumb due to the aeration from creaming, which cannot be done with solely melted butter.
The cake would be much denser if all the butter were to be browned.

Next: I freeze my bananas.  Solid.  Then I melt them in the microwave and discard most of the banana water.  It will make your cake too wet and dense.  You concentrate the flavor of the bananas a bit with the heat of the microwave, then you get rid of the excess liquid: boom.
Bigger, bolder banana flavor.

Brown sugar makes up the majority of the added sweeteners here, and it gives depth and warmth thanks to the molasses.

Buttermilk keeps the crumb tender and soft; we only need a touch, as too much would make the cake soggy and crumbly.

Finally, a smattering of chocolate chips, because chocolate.

To top the cake, buttermilk, cream cheese, powdered sugar, and milk powder get whizzed together to make a thick glaze that is not too sweet and has just the right amount of tang.

‘Tis a beautiful bundt.  There.  I said it.  The interior makes up for the photos exterior.

Perfect Banana Bundt
makes 1 bundt cake
adapted from Dorie Greenspan

ingredients:
225 grams (8 ounces, 16 tablespoons) butter, divided in two
150 grams (3/4 cup) granulated sugar
250 grams (1 1/4 cup) brown sugar
2 eggs
splash vanilla extract
4 medium bananas, frozen solid
120 grams (1/2 cup) buttermilk
big pinch salt
2 teaspoons baking soda
360 grams (3 cups) flour
200 grams (heaping 1 cup) chocolate chips, if desired

directions:
Preheat oven to 350 degrees F and grease and flour a bundt pan very thoroughly.
In a small saucepan, melt half the butter; keep cooking it until there are little brown pieces and it smells nutty; remove from heat and set aside to cool slightly.
Cream the other half of the butter with the sugars for at least 5 minutes, until light and fluffy.
Stream in the browned butter and beat until combined.
Beat in both of the eggs and the vanilla and beat for at least 3 more minutes, until the mixture is pale, fluffy, and very smooth.
Meanwhile, place your bananas in a microwave safe bowl and microwave for 30 seconds, or until the peels are just starting to soften; peel the bananas and return them to the bowl.
Microwave for about 1 1/2 minutes in 15-30 second bursts.
The bananas should be melty and should have let off a bit of liquid.
Using your hands to hold the bananas in the bowl, press and pour as much of the liquid out of the bananas as possible, without losing any banana pieces.
Pour the bananas into the creamed butter and sugar and beat until homogeneous; the mixture will look very curdled.
Pour in the buttermilk and beat to combine; the batter will still look curdled.
Dump the flour on top of the batter, then add the salt and baking soda to the top of the flour mound.
Mix on low until the batter is homogeneous and smooth; stir in the chocolate chips, if desired.
Spread the batter into the prepared bundt pan and bake for about 1 hour, or until a tester comes out completely clean; the top will be firm and dark brown, but due to a bundt pan’s shape, the interior might not be done.
Check in multiple places to ensure a completely cooked cake.
Allow the cake to cool for at least 15 minutes in the pan before inverting it onto a serving platter and glazing.

Buttermilk and Cream Cheese Glaze

ingredients:
120 grams (1/2 cup) buttermilk
140 grams (5 ounces) cream cheese, softened
200 grams (approximately 2 cups) powdered sugar, sifted
30 grams (approximately 1/3 cup) milk powder

directions:
In a food processor or with an immersion blender, process the cream cheese and buttermilk.
Add in the dry ingredients and process until a smooth glaze forms.

Food For Thought

The other day, someone politely informed me that I was a terrible writer, with a sneer and a laugh.
Um… Thanks?

I had no response.

I spluttered and mumbled.   
“Oh.”

I was saddened by the fact that I felt so bothered and upset by such breezy criticism.
I was sad that I was sad.

A cheery circle of life, no?

Anyways, this prompted me to sit down at my computer, poised and ready to write a beautiful post, one that would surely impress this person, should they ever bother to read my blog again.

I’ve been sitting here ever since.
Sort of. 
I have been dwelling on this, more than I really should be.
This post has lain blank, while my mind churns with all the things I want to shout say.

What better place to rant than here on my very own blog, on the ever-so-private internet?
Actually, I don’t want this to be private.  
I want it to be shared and sent around, all around, despite its intimate and private contents- I want it to make its rounds through people’s inboxes and readers.
This is because I want it to have some impact.
I want people to remember how others feel when they make them feel bad about themselves, because sometimes we just don’t think before we speak.
We all forget too soon how we have felt when we are sad and broken.

We’ve all been on both ends of a less-than-kind comment, and I won’t hear otherwise.

I mean, honestly, as if I needed yet another thing to pick at inside me.
Another sore place where I feel I’m not good enough- another place which I scratch until it bleeds, until I drown in all of that bloody sorrow and regret and self-loathing.
 
I struggle to grasp at confidence; I do my best to act it, even when I don’t feel at all confident within.
There are a few things that I am (was?) confident about, and one is my baking and my blog.
I toil here, probably more than you think, to create a product of which I can be proud.
 
I love my blog.  And I love my readers.
And frankly, I put enough work in here that I don’t really care if someone thinks I’m a terrible writer.  
 
But that doesn’t mean it doesn’t hurt when they tell me that.
To be honest, I’m not confident enough that it doesn’t make me doubt myself and my intentions.
I still came back to this blog with the thought that perhaps it’s not worth it, or not good enough, that people don’t like to read it.
I worried about this blog, and I worried about myself.  
For days.
 
So couldn’t that snide comment have been left to the wayside?

Because where exactly did it leave me?
Extra critical and picky over this blog.
Worried and worrying about what others think of me, not only myself, now, but also my blog.
Worried not only about how other bloggers receive me, but also my readers.
Self-doubting.
 
If we spent half as much time loving and appreciating as doubting and critiquing ourselves, don’t you think we- and this world as a whole- would be that much more satisfied and happy?

Wouldn’t we be that much more willing to love others?  To overlook their faults and embrace them?  
Don’t the majority of our criticisms and anger stem from our own sadness?

I lay in bed last night, feeling the cool air from my open window wash over me, wrapping around my ankles and resting in the crook of my elbows, flooding my nose and cooling the back of my throat, thinking about self-appreciation and love.

My thoughts- harboring hate self propagates; sow seeds of love and harvest happiness. 

The happier we are with ourselves- the more comfortable in our own skins- the brighter and happier our futures will be.

I want my future to glow- to shine- bright enough to blind.
That starts with loving myself.
That starts (anew) here.

Phew.  
To conclude this, I’m giving you the recipe for a cake that loves you back.
It’s raw, vegan, sugar-free, gluten-free, and much lower in fat than most other raw desserts.
I’ve swapped in low-fat coconut milk and coconut, reduced the amount of nuts used in the crust and filling, and added a vegetable.
Zucchini!  That magical veggie which we are all guaranteed to have too much of in the coming weeks, as the plants churn out hundreds of little green squashes.
 
This cake boasts healthy fats from coconut, avocado, and walnuts.
It gets all of its sweetness from bananas, mangoes, dates, and a touch of stevia.
It’s pretty, and it’s yummy.
It’s a hug for your stomach, which is pretty much as close as I can get to giving any of you a hug.

A Cake That Loves You Back
ingredients:
for the crust:
1/2 cup walnuts
1 cup coconut (I used reduced fat)
6 fat and juicy dried medjool dates, pitted
2 tablespoons coconut oil
for the banana layer:
2 bananas, peeled and chopped, then frozen
1 avocado
1 medium zucchini, peeled
1 scant cup of cashews, picked over and soaked in cold water for at least 2 hours
juice of 1 1/2 lemons
1 teaspoon stevia extract
for the mango layer:
2 cups chopped, frozen mango
1 cup light coconut milk
directions:
Make the crust: pulse all of the crust ingredients together in a food processor until they form a uniformly coarse meal. 
Press into the bottom of a 9-inch springform pan.
Make the banana layer: in a blender or food pro, puree the cashews until very smooth.
Add in the rest of the ingredients and puree until very, very smooth, at least a couple minutes.
Spread over the crust and chill in the freezer until set.
Meanwhile, make the mango layer: in a blender or food pro, puree the mango and coconut milk until a thick, sorbet-like mixture is formed.
Spread over the frozen banana layer, then chill again until the whole thing is set.
Before serving, allow it to sit at room temperature to temper, then cut and serve.

Can’t Trust That Day

Today’s post is brought to you by the letter B.
 
It’s Monday, people.
We could all use more chocolate and butterscotch on Mondays.
It’s tough going- I know.  I’m currently taking my 3rd of 4 AP tests. 
I chose blondies as my last meal.  And I chose well.
When I say bbbbblondies, it’s because I cannot possibly call these what they really are without sounding like a crazed sugar addict- 
brown butter brown sugar banana butterscotch blondies.
 
They’re gooey and sweet and rich, studded with more mix-ins than batter, and hit the spot straight out of the oven/freezer.  (More on this in the recipe itself)
 
They take 5 minutes to throw together, 25 minutes to bake, and, if you’re being very patient, 30 minutes to thicken and become dense in the freezer.
But you don’t have to do that, not if you’re ever so hungry.
 
These make Mondays just a tad bit more bearable.
Catch y’all on the flip side of these last two tests. 
Bbbbblondies
adapted from smittenkitchen
ingredients:
8 tablespoons (1 stick) of butter
1 packed cup light brown sugar
two big pinches coarse sea salt
1 egg
1 medium banana, mashed (about 1/2 cup)
splash vanilla
1 cup of flour
1/3 cup butterscotch chips
1/3 cup chocolate chips
1/3-1/2 cup chopped pecans
directions:
Preheat oven to 350 degrees F.
Pam spray an 8-inch round tin or an 8×8 square pan.
Brown the butter in a large saucepan.
Once butter is browned, beat it with the sugar until the mixture looks like very, very wet sand.  
Add in the egg and the salt and beat on medium speed until mixture has lightened in color and most of the sugar is dissolved, about 2 minutes.
Beat in the banana.
Stir in the vanilla, then beat in the flour until the mixture is homogeneous.
Stir in the mix-ins.
Pour batter into prepared pan and bake for 20-25 minutes, until top is shiny and gives slightly to pressure.
The trick for super dense, gooey blondies: 
Let your blondies cool most of the way on a rack in the pan, then transfer the pan to the freezer and freeze for 30-ish minutes.  The gooey center will become dense.

Copacabana

I peer out at the sun,
slowly relenting to the day’s end,
approaching the horizon and dragging its feet, dropping inch by inch,
white in its brightness from behind an evening haze.
Sand gives way to my burrowing toes,
digging for hidden treasures deep
beneath the soft carpet.
Shadows form, stretch and elongate their necks,
casting blue light, then purple, over their minute footprint kingdoms.
A lizard tongue darts out from between my lips,
savoring the sharp tang of salt.
I am reeling in the wake of a good book,
drunk on sunshine and delirious from the soft breeze,
which caresses my hair and gently dries the last drops on my skin,
leaves me as briny as the unending cerulean sea at which I squint.
These cupcakes remind me of sunny summer days.
It’s because they’re redolent with coconut and banana, with a pinch of cinnamon to round it all out.
The carrots provide a lovely texture, with just enough chew, punctuated by crunchy nuts.
 
Or maybe it’s just because as I was trying to name them, I saw this video.  
Immediately, they became cocobanana cupcakes- like copacabana.
I don’t know.  It made sense at some point or another.
These cupcakes are pretty darn healthy for cake.
They’re ideal pre-test food.
 
Coconut oil is full of MCFA (medium chain fatty acids) which are quickly metabolized by the body, unlike many other fats.
Walnuts are a brain food.  They’ve got a ton of omega-3 fatty acids (1/4 cup of walnuts provides 94% of your daily recommended value), which are crucial for proper brain function, and which almost no one gets enough of.  You find them in other nuts and seeds like flax and hemp, and they help with cognition, memory, and problem-solving.
Bananas have potassium, as does the molasses left in the raw sugar, key to maintaining proper balance in your body.
The carotenoids (namely, beta-Carotene) in the carrots and carrot juice used in the marzipan 
Cinnamon can help with regulating blood sugar, so you don’t get any nasty sugar spikes and resulting crashes.
The tumeric that I used to dye the marzipan is full of anti-oxidants.
Practically health food.
Practically.

Cocobanana Carrot Cupcakes
makes 24 mini cupcakes + 8 regular, or 18 regular cupcakes

for the cakes:
ingredients:
2/3 cup raw sugar (sub brown sugar)
1 banana, mashed
2/3 cup coconut oil, melted then measured (you can sub canola)
1 teaspoon vanilla extract
2 eggs
1 1/3 cup flour
1 teaspoon baking soda
Pinch each cinnamon and salt
1/2 pound carrots, shredded (on a cheese grater or using a food processor)
1/2 cup chopped walnuts

directions:
Preheat oven to 350 degrees F and line your cupcake tins with liners.
Stir the sugar, banana, oil, eggs, and vanilla together in a large bowl.
Dump all of the flour over top and sprinkle the baking soda, cinnamon, and salt over the flour.
Stir until just coming together, then add the carrots and walnuts and stir until thoroughly combined.
Evenly portion into cupcake liners, and bake for 11-12 minutes for minis, 15-16 for regular size.

for the frosting:
ingredients:
8 tablespoons butter, softened
6 ounces cream cheese, softened
2 1/3 cups confectioners’ sugar
Pinch salt
Splash vanilla extract
directions:
Beat everything together, with a paddle attachment, until smooth.
Pipe or spread onto cupcakes as desired.


I topped my cupcakes with some homemade marzipan that I made out of carrot juice, almond meal, and sugar.  I tinted it with some tumeric (I actually love the spicy, mustardy flavor of tumeric in sweets, I know, it’s weird.) and a little food coloring.

I’ve been in dire need of one (FWP, I know, I know).
I am treating myself to some R&R.
There are times when even the most diligent student, which I myself am not necessarily, must take three deep breaths, look left and right, and take a nap.
This is my nap.  I shall enjoy it without regret and certainly without guilt.
 
March is a tough month, school-work wise.  It’s the time when the Great Review starts.
It is the time when you look back on your year, as you prepare to relearn everything, and think to yourself, aghast,
 
my god, have I been asleep this whole time?
While many of my other classes have been piling on the work, I’m happy to say that I’ve been staying on my WISE grind.  
Even on days when I am dog-tired, I can find it in me to get up and make something.
In fact, that’s my preferred method of relaxation (when not taking a holiday, that is).
See, that’s the beauty of choosing this project.  
I love it.  It comes naturally for me.
It’s not work.  It’s play, and I’m glad of it.
I had class the other day, and it was suggested that I do some more introspective writing, in regards to why this project fits me so well and how, or if, it will fit into my future.
It’ll take me some time to think about.
Perhaps even a week or so…
I’m on island time… Can you really blame me?

I’m an exaggerator.  It’s true.  Always have been, always will be.
 
Now, my family calls it being a drama queen, diva, prima donna, etc.
 
They’re exaggerating.
Just who do you think I got it from?!
 
But seriously, guys.  
When I make crêpes, I feel like I’ve made a hundred thousand million and I look at the stack and there’s like six sitting there, plus the one in my mouth.
Talk about disheartening.
 
I’ve tried to make crêpe cakes before.
 
I must will myself not to eat them fresh and hot from the pan and I must will myself to stay at the stove making stupid pancake after pancake until I can take no more.
(And/or have had my fill of fresh, hot crêpes.)
 
Then, after hours and hours of tending to a flaming hot stove, I, ever stoical and composed goddess of patience, must wait for them to cool.
HA!  Fooled you, didn’t I?
Like heck I’m waiting for crêpes to cool… I’ve got things to do and places to see.
 
Ain’t nobody got time for dat.
 
I slap those suckers together with some filling, then stand back to admire what I expect to be a lovely little French pastry.
I’m never happy with what I behold.
 
It’s like getting a hairless cat instead of that damn poodle I was promised at the beginning of this whole ordeal.
 
They never stand above two inches tall, and they’re always droopy instead of ruffly and prim.  They’re not flavorful enough.
They’re boring AND ugly.  
A real winning combination…
 
So why are you staring at a haphazard, not very ruffly, somewhat off-kilter crêpe cake right now?
Because I couldn’t stop thinking about layered crêpes.
Because I couldn’t get the flavor combination of banana and vanilla and apricot out of my head.
Because I wanted cake for breakfast, brunch, lunch, and linner that day.
Because I wanted said cake to be a semblance of something healthy.  Ya know.
This cake is whole-wheat, has very, very little sugar in it, less than a teaspoon of butter, and is chock full of protein and healthy fats, thanks to the greek yogurt, ricotta, hazelnuts, and coconut oil; most of the sweetness comes from the bananas, vanilla seeds, and tart California apricots.

This cake is thus approved for every meal of the day. 
 It’s not the shiniest spoon in the drawer, to be sure, but it tastes good.  It tastes real good.
 
(I can’t describe how much the asymmetry of that one darned hazelnut bothers me. 
Whyyyyy didn’t I fix it while the cake was still in existence?  
It will haunt me for the rest of my life.)


Banana Apricot Crêpe Cake
for the banana crêpes:
adapted from Smitten Kitchen
ingredients:
4 tablespoons coconut oil, melted
1 6 ounce banana, peeled
1 cup almond milk
1/4 cup plus 2 tablespoons white whole wheat flour
1/4 cup plus 2 tablespoons all purpose flour
4 eggs
2 tablespoons natural sugar
splash vanilla
big pinch sea salt
pinch each cinnamon, cloves, and nutmeg
directions:
Whir all ingredients together in a food processor.  
Let batter rest for at least 20 minutes.
To make the crêpes, heat a 6 inch skillet up on medium high heat.
Brush with coconut oil- you should only have a thin film.
Pour about 2 tablespoons of batter into the pan and immediately swirl to coat the bottom of the pan.
Cook for 1 to 2 minutes until the top is cooked and the bottom is golden brown.  
To flip, use a spatula to pick up the edge, then gently use your fingers to pick up and flip the crêpe.  (Don’t be a baby.  It’s not that hot.)
Continue until all batter is used up.

for the Greek yogurt and ricotta filling:
ingredients:
1/3 -1/2 cup Greek yogurt, depending on how loose you want your filling and/or how thick you want the filling layers to be.  I used closer to 1/2 a cup.
1/3 cup part skim ricotta
1/3 cup powdered sugar
splash vanilla
pinch salt
directions:
Whisk all ingredients together.  Set aside and let thicken slightly.

for the apricot-vanilla compote:
ingredients:
15 dried California apricots
1 vanilla bean or 2-3 already used pods (I fished some used ones out of my sugar)
boiling water
directions:
Roughly chop the apricots.  
Place in a heat safe bowl with the vanilla pod (cut the pod up into 2 1/2 inch chunks if it is whole).  
Pour boiling water over to cover completely.  
Allow to sit for 15 minutes, until the apricots are softened and there are vanilla seeds floating in the water.
Drain most of the water, reserving 2-3 tablespoons.  
Scrape the insides of the vanilla beans out and place in a food processor along with the reserved water and the apricots.  
Pulse until a slightly chunky paste forms.  Set aside.

for the caramel sauce:
adapted from the NYT
ingredients:
1/4 cup sugar
1 tablespoon water
2 tablespoons light cream
1/2 tablespoons butter
big pinch of sea salt (around 3/4 teaspoon)
directions:
Add the sugar and water to a heavy bottomed saucepan and cook on medium heat until light amber, 5-7 minutes.  
Remove from heat and immediately stir in cream.  
Mixture will bubble and steam, so beware.  
Whisk in butter and salt; use before completely cooled.  
To loosen it up again before use, microwave it for a few seconds until it is liquid.

to assemble:
Cut up a large banana into thin slices.  
Begin layering the crepes, spreading each with yogurt filling, then either banana slices or apricot filling.  
Alternate the banana and apricot.  
Once your last crêpe is on the cake, pour the caramel over top.  
If desired, you can stack some toasted hazelnuts on top before pouring the caramel.  
Allow the caramel to set slightly, then serve.

Brave New World


I find myself standing on a precipice, peering down, cookie in hand.
I find myself staring at a page the color of milk, devoid of text.
I find myself adrift on the oceanic interwebs, floating, but not peacefully. 

I have lots to write about.  My thoughts just won’t come out as crisply and concisely as they are in my head.

I’ll be honest.  I’m apprehensive.  Scared, even.
I don’t know what will become of my blog now that I’ve introduced these WISE posts.

How much more thought and time will have to go into a post?  (As of now, one post, comprised of just the writing, photoshopping, and formatting, let alone the preparation of the featured food, takes me roughly 1 1/2 hours.)  
I have tried, and will continue to try, to put meaningful thought and time into a couple of my blog posts.
I don’t want to say it’s true, but it is: now that my blog is becoming, on a once weekly basis, a school-tool, I am more nervous about writing.
Do I sound silly and shallow? (Always.)
Am I proper enough?
Can I use y’all?  And lol?  
What will become of my “diva” and “stupid” labels? 
Are they off limits?

I pray that you, my lovely, lovely, readers (or lookers… I know many come for the food porn photos only, [Editor’s note re: food porn: perhaps too callous?] and that is totally one hundred percent fine by me), will stick with me as I branch out into a new and distinctive field: creating blog posts that I know my teacher will see.

I shall have to test the waters; the waters I shall test.

In the meantime, let me talk about what I know best: dessert.
The inspiration for this dessert came from the idea of “Mexican hot chocolate,” which involves cocoa, cayenne, and cinnamon.  From there, my mind jumped instantly to cajeta, the traditional goat milk-version of dulce de leche, which is often spiced with a pinch of cinnamon.  
By then, I was spinning off on a Latin American tangent: I wanted to include corn (I had seen the wonderful corn cookies from Milk Bar recently), avocados, limes, bananas, etc.
With a firm flavor base in my head, I edited components out.
I knew I wanted to do a sweet “guacamole,” in the form of a lime-avocado purée.
I knew I wanted to use corn cookies.
I knew I wanted an ice cream.
I knew I wanted fluffy sponge cake and bittersweet ganache.
Here’s the result.

Brave New World:
1. Avocado lime purée
2. Bittersweet chocolate cayenne ganache
3. Brûléed banana brunoise
4. Cinnamon dulce de leche ice cream
5. Instant chocolate sponge cake
6. Crushed corn cookies
Instant Sponge Cake
ingredients:
1 egg white
1/4 cup sugar, divided
2 tablespoons cocoa powder
1/4 cup flour
3 tablespoons oil
3 tablespoons milk
2 paper cups (no plastic or wax)
directions:
Whip the egg white with 2 tablespoons of the sugar.  Mix all of the other ingredients together, then fold the egg white into the batter.  Poke slits in the bottom of your cups, and pour the batter in.  Place on a plate and microwave for 2 minutes on high (This varies because microwaves are so variable.  To check for doneness, touch the top of the cake with your finger.  It should not be sticky and should not collapse; it should be fully cooked.).
For use in the dessert, rip into small, organically shaped pieces.
 
Avocado-Lime Purée
ingredients:
1/2 a hass avocado
3 tablespoons powdered sugar
Juice of 1 whole lime
Big pinch salt
directions:
Mash the avocado into a rough mush like guacamole.  Stir in the sugar, lime juice, and salt.  Purée the entire mixture, either with an immersion blender or food processor, until very smooth.  Be sure to add all of the juice of the lime; the acid is what keeps the avocado a beautiful green color.
 
Chocolate cayenne ganache
ingredients:
1/2 ounce bittersweet chocolate
3 1/2 tablespoons cream
Pinch of cayenne pepper
directions:
Gently heat all ingredients together, either in a saucepan over low heat or in 20 second bursts in the microwave, until approximately 2/3 of the chocolate is melted.  Remove from heat, let sit for 2 minutes, then stir together until silky and shiny. 
For use in the dessert: heat up until smooth and free-flowing by nuking it for no more than 15 seconds.
 
Brûléed banana brunoise
ingredients:
1 banana, peeled.
Sugar
Torch
directions:
Cut the banana in half right in the middle (across the skinny part of the banana, not the long way).  Trim off the sides of the banana so that they are plumb and cut 1/8 inch wide planks.  Take the planks and trim off the ends so that the edges are straight, and cut 1/8 inch wide matchsticks.  Take the matchsticks and cut them into 1/8 inch squares.  You will now have 1/8 inch cubes.  Place them on a plate, sprinkle liberally with sugar, and brûlée them with your torch, until the edges are dark and the sugar is caramelized.
 
Corn Cookies
straight from the Milk Bar cookbook
ingredients:
225 g butter (8 ounces)
300 g sugar
1 egg
265 g flour
73 g freeze-dried corn, ground into a powder in a food processor or blender
3 g baking powder (3/4 teaspoon)
1.5 g baking soda (1/4 teaspoon)
6 g kosher salt (1 1/2 teaspoons)
directions:
Cream your butter and sugar together for 2 full minutes on medium speed.  Scrape the sides, add the egg, and beat on medium high speed for 7 full minutes (set a timer).  Scrape the sides of the bowl, add in all of the dry ingredients, and mix just until combined, and no longer- about 45 seconds.  Portion out cookies with an ice cream scoop and flatten with your palm or a glass.  Chill for at least 2 hours and up to 2 days.  When you are ready to bake them off, preheat oven to 350 degrees F.  Bake for 18 minutes.
To use in the dessert, once the cookies are cool, smash one or two of them into powder, either in a bag with a rolling pin or a food processor.  Eat the others. Yum.
 
Cinnamon-Dulce de Leche Ice Cream
7 ounces (1/2 can) sweetened condensed milk plus 2 big pinches salt OR 7 ounces store bought dulce de leche (or cajeta!)
220 g milk
1 teaspoon gelatin+ 2 tablespoons cold water
160 g heavy cream
35 g corn syrup or 100 g glucose
65 g sugar
40 g milk powder
1 g kosher salt
directions:
Let cool completely.  
Bloom your gelatin in the cold water by sprinkling it lightly over the surface and allowing it to sit for 3-5 minutes.  
Blend the dulce de leche with the milk, over low heat, until completely homogenized (the heat helps the dulce de leche dissolve).  
Blend in the bloomed gelatin (use a hand blender).  
Remove from heat and blend in the rest of the ingredients until super smooth and homogeneous.  
Allow to cool completely; chill for up to 1 week.  
Once you are ready to make ice cream, spin the mixture in an ice cream maker, and put in an airtight container for up to a week.  
To quenelle, use boiling hot water to heat up your spoon and allow the ice cream to temper for about 2 minutes before scooping.
 
 
To assemble:
1. Place a dollop of avo-lime purée on the bottom of a plate, and, using the back of a spoon, swoop in an arc to create a schmear.  
2. Splatter chocolate ganache on the plate.
3. Place your best cubes of banana onto the plate; pile them up into an organic pyramid.
4. Place a quenelle of tempered ice cream in the center of the plate.
5. Place 3 pieces of sponge cake around the quenelle; do not make them symmetric.
6. Sprinkle corn cookies halfway onto the quenelle and around the plate.
Serve immediately.

Because I have two very delicious recipes today that are comprised of multiple dessert components.


I guess I was in a Dr. Frankenstein type of mood.
See, I’ve been seeing a thing called “Slutty Brownies” slutting flying around the blogosphere.  


What is this brownie they are speaking of?
A chocolate chip cookie bottom, with a layer of Oreos chocolate sandwich cookies, then a layer of brownies.  
Yes. Yes. YES.
But… I was sending these to my best frenemy friend, Mikala, in California.  I knew I had to ramp them up a notch.  (Surprise, Mikala! They’re on their way.)
And that is how the Super Freak Brownies were born.  So many other names were tempting me, but I’m trying to keep it P.G… Ugh.
Brown sugar blondie base… Oreos come next… Chocolate peanut butter ganache… Red velvet brownie with cream cheese swirl.

Now meet Frankenpie.
Or as I like to call this beaut… The Americana Dream Cream Pie.


Diners across the nation have been serving hundreds of different flavors of pie for ages.  (And thank goodness for it!)

Apple, banana cream, banoffee, blueberry, buttermilk, cherry, chess, chocolate, coconut cream, crack, derby, French silk, key lime, lemon meringue, mud, peach, peanut butter, pecan, pumpkin, raspberry, shoofly, strawberry, strawberry-rhubarb, sweet potato… the list goes on.  
I combined banana, chocolate, and coconut: caramelized bananas into a chocolate-painted crust, covered in chocolate ganache, and topped with a coconut pastry cream.


And with that, I’m hungry.  Over and out.

Super Freak Brownies
blondie layer from smittenkitchen, red velvet brownies adapted from varying online sources
for the blondie layer:
ingredients:
1/2 stick butter, melted
119 grams light brown sugar
1/2 a large egg (weigh it out, divide by two, and save the other half.  You’ll need it.)
splash vanilla
pinch sea salt
1/2 cup flour
big handful bittersweet chocolate chips
directions:
Mix the butter, sugar, egg, vanilla, and salt together.  Stir in flour, then chocolate chips.  Spread over the bottom of a well-buttered 8×8 pan. Top with Oreos. (You’ll need 16)
for the ganache:
ingredients:
big handful of chocolate chips- I used bittersweet (use your discretion on how chocolaty you want it)
1/3 cup peanut butter
directions:
Heat chocolate and peanut butter together until melted and combined, either in a microwave or on a stove top.  Spread over Oreos.
for the red velvet brownies:
ingredients:
1/2 stick melted butter
1/2 cup sugar
splash vanilla
bit of red gel food coloring
pinch sea salt
1/2 teaspoon white vinegar
2 tablespoons cocoa powder
1 egg
1/4 cup plus 2 tablespoons flour
4 ounces cream cheese, softened
1/2 a large egg
2 tablespoons sugar
splash vanilla
directions:
Mix the butter and the first measurement of sugar together with the vanilla, food coloring, sea salt, vinegar, and cocoa powder.  Next, add in the egg, then stir in the flour.  Pour 3/4 of the batter over the ganache, reserving the rest to dot the top of the cream cheese mixture.  For the cream cheese swirl, beat the cream cheese, 1/2 egg, sugar, and vanilla together, then dollop it over the brownies.  Dot the cream cheese with the remaining red velvet batter, then swirl to your heart’s content with a toothpick.  
Bake at 350 degrees F for 30-35 minutes, or when a toothpick comes out clean.
Allow to cool, then cut into 9 squares.

Americana Dream Cream Pie:
ingredients:
all-butter pie dough for 1 single crust, (baked at 425 for 8 minutes lined with aluminum foil and loaded with pie weights, then at 350 without the aluminum/pie weights, but pricked with a fork, for 15-20 minutes longer, until golden) brushed with melted chocolate once cool
3 super ripe bananas
4 tablespoons sugar
2 tablespoons butter
1/4 cup flour
100 g bittersweet chocolate
1/3 cup half-and-half
1 can coconut milk
pinch salt
1/2 cup sugar
1/4 cup flour
4 egg yolks
splash vanilla and coconut extract
1 cup finely shredded unsweetened coconut
toasted chunk coconut, for garnish
directions:
Put bananas, sliced, into a pan with the butter, sugar, and flour.  Allow to cook until the mixture is thickened and very, very fragrant, about 10 minutes on medium heat.
Pour into bowl and allow to cool.  Once cool, pour into the cooled and chocolate-brushed pie crust.  Make the pastry cream:  heat up the coconut milk until simmering.  Whisk the yolks, flour, sugar, and salt together in a bowl.  Pour 2/3 cup of the hot milk over the yolks while whisking, then pour the yolk mixture back into the pan with the milk.  Allow to come to cook (it will boil and bubble) until thickened significantly.  Pour into another bowl, stir in the extracts and coconut, and allow to cool completely.  Next, heat up the half-and-half until almost boiling (I nuked it).  Pour it over the chocolate and allow to sit until the chocolate is melted, then stir until smooth.  Pour/spread over the bananas, then spread the cooled pastry cream over that.  Chill until well-set, then garnish with the toasted coconut.
