I am a food blogger.
(And I just quoted Drake.  Lest I be smote from this weblog by the fiery foodie gods for doing so, I leave you with these fancy cookies.)
I eat up seasonal themes like they’re small batch chocolates, y’all.

If you thought you were going to escape winter unscathed and untouched by pepperminty desserts, hoo boy were you wrong.  Won’t you ever learn what a terrible blogger I am?
Remember what happened in the autumn?  How I denied and denied and procrastinated and then DUMPED all the punkin on you at once?
In fact, right after you had thought it safe to dispose of the sad leftover pumpkin in the can sitting in the back of your fridge. (Is that only my family?  My mom liked the can, thus we have 1/2 cup of  month old pumpkin.  Yumbo.)

And you were fed up and almost wrote my blog off.  But you forgave me and we had fika and all was well.

Well, here we go!  I’m coming in hot with peppermint, the cliched classic winter flavor.
Luckily, I got my shit together and this post is still somewhat appropriate, because it’s not yet xmas and therefore we all still have candy canes lying around.

Funny thing is, I only intended on having one minty post.  However, these cookies used up a lot fewer candy canes than I anticipated, so I have an entire tupperware full of peppermint bits that must be put to good use.

I told you I was irritating.  Stock up now!  You can take your anger out by smashing them to little bits while you wait for the next inevitably untimely peppermint post.

We get our tree from the same farm every year, and have done so since the family moved to Ithaca (prior to my being).

When we were little, we’d always get candy canes after picking out our tree, from a basket a little shed.

Candy canes were always passed out by teachers and kids alike when the holidays neared in school, a sweet little gift that lifted spirits.

Sometimes we’d get candy canes in our stockings.

Candy canes will forever bring about memories of the holidays, of winter, of my favorite time of year.

Yes.  Yes.  Yes yes yes yes.

Chocolate hazelnut shells + chocolate mint buttercream + crushed candy canes.

Need I say more?

But actually.  These were delicious little guys, crisp and filled to the brim with silky buttercream.
The peppermint accents were delightful, a perfect foil to rich hazelnuts and toasty chocolate.

But actually.  So many cookies to share with you.  My head is spinning.  My fingers grow weary of typing.  My oven, well… my oven is always on anyways.

A few quick tips, before I leave you with this addition to your cookie platter.

Bake your macs on a well-insulated baking sheet.  Or, double or triple up.

Make Italian meringue macarons!  Just try it once.  For me.  Because I am a very firm believer in Italian meringue.

Test your batter well and often with the ribbon test: a spatula lifted out of the batter should drip in ribbons, which should disappear back into the rest of the batter within 10 seconds.

Minted Macarons

ingredients:
for the shells:
adapted from Jo the Tart Queen
130 grams hazelnuts or almonds
25 grams cocoa powder
150 grams powdered sugar
70 grams egg whites (approximately 2 egg whites)

150 grams granulated sugar
30 grams water
70 grams egg whites
pinch cream of tartar (optional)

for the buttercream:
180 grams butter
60 grams dark chocolate, melted
splash vanilla extract
2 drops peppermint extract
70 grams powdered sugar, sifted
1 teaspoon-1 tablespoon heavy cream, as needed to thin

to assemble:
chopped candy canes or peppermint candies

directions:
Make the shells:
Line 3 baking sheets with parchment paper, being sure it lies flat.
Prepare a large piping bag with a large, plain piping tip.
Preheat oven to 325 degrees F.
Place nuts, confectioners sugar, and cocoa powder in a food processor and process until finely ground.
Sift into a bowl and add the first measure of egg whites.
Stir until a smooth paste forms.
Combine the water and granulated sugar in a small sauce pot fitted with a candy thermometer.
Place the second measure of egg whites along with the cream of tartar in a stand mixer and start to whip them on low speed.
Meanwhile, begin to heat up your sugar and water.
When the sugar syrup reaches 242 degrees F, the egg whites should be at soft peaks.
Drizzle the syrup into the whites with the mixer on low speed, then increase speed and whip on high until slightly cooled and meringue is glossy and stiff.
Fold 1/3 of the meringue into the nut paste until the nut paste is lightened up.
Fold in the rest of the meringue and continue to make folding, stirring motions until the batter flows like lava and a spatula lifted out of the batter drips in ribbons.
Place the batter in the piping bag and pipe out small circles, flicking with your wrist to sever the stream of batter.
Allow to dry for a few minutes, then place in the oven and bake until a cookie lifts cleanly off the parchment.
Allow to cool completely, then fill and decorate.
Make the buttercream:
Melt the chocolate and stir until smooth; set aside to cool slightly.
Beat the butter on high speed until very smooth and fluffy; add in the extracts and beat until combined.
Scrape the sides of the bowl very well, then add in all of the chocolate at once and beat on high speed until combined.
Sift the confectioners sugar over top and then beat it in.
If frosting is too thick, add heavy cream one teaspoon at a time to thin.
To assemble, spread a thick layer of buttercream onto one macaron shell; place another one on top and squeeze slightly so that the buttercream slightly protrudes from the sides.
Roll in chopped candy canes.
Allow to age for at least 1 day before eating. (Ahem.)

‘Tis the season for cookies.
We alllll know it.
And you know, I ain’t mad at it.  Cookies and I get along very well.

Anyways, this year we’re stepping up our cookie game.  Right?
Let’s give away cookies that take the lackluster cookie platter to the next level.

We started with nutmeg, maple, and rye sugar cookies.
Now, we’re doing traditional, but we’re doing it a better way.

Linzer cookies are totally a staple on holiday cookie platters.
Butter cookies with a cut out, filled with jam.  You’ve seen ’em.  You’ve enjoyed eaten them.

Here’s the problem: too often they are dry and crumbly, sucking the moisture right out of your mouth and leaving a telltale trail of crumbs down the front of your ugly sweater. (What?! We all do it.)

Or, they’re utterly boring.  Not enough punch; plain Jane fillings and plain Jane casings.
Not so with these Linzer cookies!  They’ve got a hefty pinch of salt, a touch of spice, and fillings with body.

These cookies are made with almond flour and minimal sugar, which means the flavors stay clean and un-muddled on your tongue.
To ensure that they have a good bite, not too crumbly nor too firm, we use a technique most often utilized in making fluffy cakes with tight crumbs: reverse creaming.

Reverse creaming involves whisking all the dry ingredients together, then beating in soft butter followed by the wet ingredients.  It creates a dough with minimal air pockets, meaning your cookies will be nice and flat and less prone to crumbling.

We’ve got a good base going: lightly spiced and sweetened, with hints of almond and a firm, crisp bite.

Don’t mess it up with the fillings!  Use good quality jams.
My favorite was the D’arbo sour cherry jam, which went well with the almond undertones (almonds+stone fruit=magic), and also offset the butteriness of the cookies masterfully, what with its tart, fruity self.
I highly recommend choosing fillings with a little kick.
In the future, I’d add a pinch of cayenne to the Bonne Maman strawberry jam, and a sprinkle of salt to the Nutella.  I’m partial to apricot as is, but I bet an extra touch of nutmeg would work wonders.

Linzer Cookies
adapted from Martha Stewart
makes approximately 20 large sandwich cookies
ingredients:
5 ounces (1 cup and 3 tablespoons) almond flour or finely ground almonds
3.6 ounces (1/2 cup) sugar
1 teaspoon cinnamon
1/8 teaspoon freshly ground nutmeg
1 teaspoon baking powder
big pinch kosher salt
9 ounces (2 cups plus 2 tablespoons) flour
8 ounces (16 tablespoons) butter, softened and cut into small chunks
1 egg
splash vanilla extract
confectioner’s sugar, for dusting
fruit jams or Nutella, as desired

directions:
In the bowl of a stand mixer fitted with the paddle, add the almond flour, sugar, spices, baking powder, salt, and flour and mix to combine.
Add in the softened butter and paddle until the mixture resembles a coarse meal.
Add in the egg and vanilla and mix until a dough forms.
Turn the dough out onto a lightly floured surface and roll out to 1/4 inch thickness.
Cut out circles, and cut a small shape out of half of the circles.
Place onto parchment lined baking sheets and freeze or chill for at least 30 minutes.
Preheat oven to 350 degrees F.
Bake the frozen/chilled cookies for 9-11 minutes, until set and lightly golden.
Allow to cool completely.
Spread 1 1/2 teaspoons of filling of choice onto the cookies without cut outs.
Dust the cookies with the cutouts with plenty of confectioners sugar, then sandwich them on top of the filling and uncut cookies.

Walnut Sablés

ingredients:
660 grams (5 cups) flour
120 grams (1 cup) walnut halves
450 grams (4 sticks, 1 lb) butter
400 grams (2 cups) sugar
2 teaspoons kosher salt
2 splashes vanilla extract
2 eggs
1 egg beaten with 1 tablespoon water, for egg wash
melted bittersweet chocolate, if desired, for dipping

directions:
In a food processor, pulse the flour and walnut halves until a uniform flour forms; careful not to over process, as the walnuts will start to form butter.
In a stand mixer, beat the butter for 4 minutes, until light and fluffy.
Scrape the sides of the bowl and add in the sugar and salt.
Beat for 2 more minutes, until all the grit is gone and the mixture is very pale.
Add in the vanilla and eggs and beat for 2 more minutes.
Scrape the bowl and dump in all of the walnut flour mixture.
Mix on low until a dough forms.
Chill for at least 45 minutes.
Roll out on a very well-floured surface, and press with a cookie stamp (alternately, just cut out shapes) and cut out.
Chill for at least 30 more minutes.
Preheat oven to 350 degrees F.
Brush chilled cookies with the egg wash and bake for 10-12 minutes, until golden brown.
Remove from oven and let cool completely before dipping in chocolate.
Place the cookies on a cooling rack to let the chocolate drip through.

Yes, I made all of that myself.  Boy, was it a marathon.  A very, very, very, long and delicious haul.

My photos were all very rushed and poorly lit; I had hoped to show you pictures of all the gluten free goodies I made, but no such luck.

At least I got a picture of the pumpkin roll cake… So I can torture you with yet another pumpkin recipe!

This will be the last pumpkin recipe of the year.

It’s one to remember: light, fluffy pumpkin sponge cake rolled around mascarpone and maple whipped cream, topped with brown butter and Frangelico glaze and chopped pecans.

You might just be inspired to pull out one last can of pumpkin.

Thanksgiving (scaled)

 Pumpkin Roll Cake

ingredients:
for the cake:
powdered sugar, for sprinkling on towel
90 grams (3/4 cup) flour
½ teaspoon baking powder
½ teaspoon baking soda
cinnamon, cloves, nutmeg, ginger, pepper, coriander
pinch salt
3 large eggs
200 grams (1 cup) sugar
2/3 cup pumpkin puree
for the filling:
1 cup whipped cream
1 cup mascarpone
¼ cup powdered sugar
2 tablespoons maple syrup
pinch salt

for the glaze:
4 tablespoons butter, browned
2/3 cup powdered sugar
1/3 cup powdered milk
2 tablespoons maple syrup
2 teaspoons Frangelico (optional)

For garnish:
Chopped pecans

Directions:
For the cake, preheat oven to 350 degrees F.  Grease and flour a sheet pan very well; line with parchment paper.
Sprinkle a dishtowel with powdered sugar.
Whisk the flour, leaveners, spices, and salt together.
Beat the yolks and ¼ cup of the sugar very well, then stir in pumpkin.
Sift the flour mixture over the yolks and fold in gently.
Whip the egg whites and remaining sugar to stiff peaks.
Fold into the pumpkin mixture, then spread the batter out onto your prepared pan.
Bake for 15 minutes, until set.
Flip over onto towel and let cool for 5 minutes.
Gently roll up the cake and set aside to cool completely.
For the filling, beat the whipped cream to soft peaks, then gently beat in the other ingredients.
Spread onto the cooled, unrolled cake, then reroll the cake.
For the glaze, mix everything together until no lumps remain; drizzle over the rolled cake.
Garnish with chopped pecans.

Sidenote: I cannot wait for February 2014.  I’m dying with anticipation for Season 4 of what is arguably the best television series ever made.
And yes, I’m willing to make that argument.

My dad and I good-naturedly disagree about this all the time.

Speaking of my dad, he’s here in Chicago visiting me and giving a talk at the Booth school.  I’m sitting here writing this while he works next to me at the Quad Club.

We just had dinner at the Green Zebra…

Life is good.

Edit: Sitting in Harper Memorial.  Just ate breakfast at the dining hall.  Wish I were at the QC.  Wish I had just eaten at the Green Zebra.

One thing I miss most about home is the leisure time spent watching my favorite shows avec mon papa.

I’m going through serious withdrawals, because while we have a Slingbox, I just don’t have enough time to sit down and watch the many hours of TV that have racked up.  I wish I did, but I don’t.  For a period of time, he was in London, and that didn’t help either.  Oh well.

Also, I just miss spending time with him and my mama and mes animaux.

I’m so grateful that he is here this weekend, and I’m incredibly excited to go home for Thanksgiving, which is already my favorite hollyday.

It has been pretty bracingly cold in Chicago over the last few days.
I can’t say I’m surprised or unused to this type of weather, since Ithaca has very similar weather patterns (it generally lags 1 or 2 days behind Chicago weather, but is temperature-wise very similar), but it sure came on fast.

Supposedly, it will be 64 on Sunday…  Again, can’t say I’m surprised.

But three short days ago, it was 27 degrees F with the sun out, not including the windchill.

Edit: It’s around 45-50 degrees out today.  Gorgeous.  Perfect.  My kind of weather.  Cool enough to be comfortable.  Warm enough to be pleasant.

Enter: bread pudd’n.
Hot, crunchy, citrusy, and custard-like, it’s a great comfort dessert.
The bread pieces on top are crunchy and crispy from the almonds and extra sugar which caramelizes in the oven.
Those on bottom are soft and gooey, bathed in custard redolent of citrus and butter.
It’s an eggy delight, and so simple!

I would love to be curled up on a couch right now, wrapped in blankets, with a steaming bowl full of bread pudding topped with a great mound of softly whipped cream and powdered sugar, watching Game of Thrones.

Can someone come make that happen?

Orange and Lemon Bread Pudding
ingredients:
5 eggs
1/2 cup plus 2 tablespoons brown sugar
pinch kosher salt
2 1/3 cups milk
zest of 1 lemon
juice of 1 lemon
1 batch orange curd, fully cooled (recipe below)
1 1/2 loaves soft Italian bread
turbinado and granulated sugar, for sprinkling
handful almond slices, for garnish
powdered sugar and softly whipped cream, for serving

directions:
Preheat oven to 350 degrees F.
Butter a 12-inch round pan (or other pan of comparable size).
Slice your bread into slices between 1/2 and 3/4 inch thick.
Whisk eggs, milk, lemon zest and juice, sugar, and salt together.
Spread each of the sides of each of your slices of bread with orange curd, then arrange them in your pan.
Pour the milk and egg mixture over the slices of bread, making sure that they all get at least partially covered.
Sprinkle heavily with turbinado and granulated sugar.
Bake for 30 minutes, turning halfway through, until custard is set but slightly wobbly.
Garnish with lots of almonds and stick back in the oven for 5 minutes, to let the almonds toast up a little bit.
Remove from oven and let cool slightly, then dust with powdered sugar and serve.
Bread pudding and whipped cream or ice cream are a match made in the heavens above.  Do it.

Orange Curd:
ingredients:
1/3 cup sugar
1/2 cup fresh orange juice
zest of 2 oranges
1/2 teaspoon cornstarch
pinch salt
1 egg plus 2 egg yolks
1/2 teaspoon vinegar or lemon juice
8 tablespoons butter, cut into chunks

directions:
Whisk sugar, juice, zest, cornstarch, salt, and eggs together in a pot.
Begin to heat over low-medium heat until it comes to a boil; allow to cook until thick.
Remove from heat and whisk in vinegar or lemon juice.
Either transfer to a stand blender or use a hand blender: blend in the chunks of butter until the curd is very smooth and silky.
Allow to cool, then transfer to the fridge with a piece of clingfilm placed directly on the surface of the curd to cool completely.

This pie… There’s just so much good stuff going on!  Yummy, delicious stuff.

First, let’s talk crust.  I know.  It’s the scariest part for most people.  But crust is your friend!

Buttery, flaky, tender crust.  How could it NOT be your friend?

The trick to a good pie crust is not a food processor, I’ve decided.

YesokokIknow, the food processor revolutionized pie crust because it shaved 5 minutes off the preparation time and allowed people to keep their hands clean.
Newsflash: you’re cooking and baking, your hands are going to get dirty sometime.  Pie crust is a good excuse to play around in flour and butter.
(BUTTER.  Not shortening.  As you can see in this pie, I’ve swapped my usual buttermilk for water to give a more sturdy crust, since it’s a custard pie that will not have par-baking.  That said, I could have swapped butter for shortening.  But why, oh why, would I want to sacrifice that flavor?  Oh, right.  I wouldn’t.  And neither would you.  I won’t have it any other way.)

By making your pie crust by hand, you get a good feel for the texture.  In a food processor, an extra 3 pulses gives you a gummy crust that will be tough and shrink during baking.  (Insert sad face here.)

Let’s take this chance to play with our food, no?  It’ll be fun.

Dump your flour, salt, and a pinch of sugar into a big bowl.
Cube your butter into little chunky chunks, then throw it back in the fridge for 5 minutes to re-chill.
Meanwhile, fill a small bowl with cold water, and chuck 2 ice cubes in it.  Keep a tablespoon near the ice water.
Stir the flour n’ stuff around with your hands.
Take your butter chunks and place them all in the flour, all snuggly and nested down in there.
Now, with your fingers and palms, start to smash the cubes into flat sheets.  Rub about half between your hands to create a coarse meal.  The others, leave as small, flattened chunks, the size of peas.
You should have a rough mish-mash of butter and flour and butter-flour meal.
Here comes the fun: dunk the tablespoon measure in the ice water and put 2 measures into your butter/flour.
Using your hands, gently stir the mixture together.  Some will stick to your hands.  Just scrape it off and put it back in the mix.
If there are still a lot of dry chunks at the bottom of your bowl, add up to 2 more tablespoons of water, but go slow.
When your crust is done, it will hold together and all of the flour will be hydrated, but it won’t be very sticky or gooey.  It should be smooth.
Give it a couple kneads, a little massage, and wrap it up nice and snug in some plastic wrap.
Back in the fridge she goes!

To roll the crust out, liberally sprinkle a clean countertop with flour, then place your crust in the middle.
Sprinkle the top with flour, and gently, starting from the middle, roll towards the edges, creating a rough circle shape.
Once it’s 3 inches larger in all directions than the bottom of your pie dish, roll it up on your rolling pin (like a roll of paper towels) and place it in the dish.  Crimp the edges by rolling the excess up underneath, then pinching to create pretty little ruffles.
Back to the fridge!  Keep it COLD, y’all!

So you’ve got your awesome all-butter pie crust made and ready and chilling.

Let’s fill it with heavenly goodies.

Start with brown sugar and a friendly pinch of salt, and add the ambrosia of the gods nutty brown butter.

Whisk whisk whisk in warm, autumnal spices and six (6!) egg yolks to ensure a silky, custard-like texture.

Stir in 70% bittersweet chocolate, melted and luxurious.

Finish with a sprinkling of pecans and turbinado sugar.

You’ll smell this pie long before it emerges from the oven.  It’s fragrant with the best things in life: butter, spices, and chocolate.
Once it’s partially cooled, you’ll stick it in the freezer and it will thicken into a custard-y pie, the smooth and gooey chocolate interrupted only by crisp pecans.

Serve this pie sprinkled with a touch of powdered sugar, and unsweetened whipped cream or barely sweetened vanilla ice cream.

I might have to make this again for Thanksgiving.

It is among the 3 best pies I’ve ever made.

It is that good, people.

Pumpkin Spice Brown Butter Chocolate Pecan Pie

ingredients:
for the crust:
165 grams (1 1/2 cups)flour
8 grams (2 teaspoons) sugar
pinch salt
113 grams (8 tablespoons) butter, cut into small pieces and cold
45 grams (3 tablespoons ice water, or as needed)

for the filling:
140 grams (scant cup) bittersweet chocolate chunks or chips
220 grams (1 cup plus 2 scant tablespoons) sugar
150 grams (1/2 cup plus 3 tablespoons) brown sugar
17 grams (2 tablespoons plus 2 teaspoons) nonfat dry milk powder
1 1/2 teaspoons pumpkin pie spice, or a big pinch each cloves, nutmeg, and star anise, plus 2 pinches each cinnamon and ginger
big pinch kosher salt
180 grams (13 tablespoons) butter, browned
120 grams (1/2 cup) milk
6 egg yolks
approximately 300 grams (2 1/2 cups) pecan halves, the pretty ones saved for garnish and the rest chopped roughly
turbinado sugar, for sprinkling, if desired

directions:
Make the crust: stir the flour, sugar, and salt together in a large bowl.
Add the butter cubes in and cut them in with a pastry blender or your fingers, flattening some and rubbing others into the flour.
Leave pieces the size of peas; the rest should resemble a coarse meal.
Stir in the water, starting with 2 tablespoons, until the dough comes together; it shouldn’t be sticky or crumbly, but just barely hold together.
Knead gently 3 or 4 times, then pat into a disk and refrigerate.
Meanwhile, make the filling: begin by melting the chocolate, gently; do this in a microwave on partial power or over a double boiler.
When the chocolate is 2/3 melted, remove from heat and stir until all melted; set aside to cool slightly.
Whisk the sugar, brown sugar, milk powder, spices, and salt together until no little lumps remain.
Whisk the brown butter in vigorously. Whisk the yolks and milk together, then vigorously whisk them into the butter/sugar mixture.
Finally, whisk in the melted and cooled chocolate and stir in the chopped pecans.
Set aside to thicken and rest while you finish the crust.
Preheat oven to 350 degrees F. Roll the crust out, gently, to a 1/8 inch thickness.
Place it in a 9-inch pie pan that is about 2 inches in depth.
Flute or crimp the edges as desired, then place in the freezer until it is hardened, about 10 minutes.
Pour filling into the crust and decorate with the reserved pecan halves.
Top with a little turbinado sugar, then place on a cookie sheet in the oven.
Bake for 40 minutes, until top is shiny and filling is set; you may need to cover the top with aluminum foil to prevent the pecans from burning (mine got a little toasty…).
Remove from oven and allow to cool almost completely, then finish the chilling in the freezer to make the filling extra dense.
Enjoy with unsweetened whipped cream and a little powdered sugar!

Subpar

 
It was my dad’s birthday today!
 
My dad is not your average father… So, obviously, I made him a not so average birthday cake.
It’s birthday cake… with a twist.
Actually, a few twists.
Or a few kicks.  However you want to say it.
 
I’m very tired while writing this post (on Sundays, the credits of Breaking Bad pretty much signal bedtime to me), so I’ll keep it short and hopefully sweet.
 
My dad is a wonderful human being.  Just superb.  I mean, really.
I could not ask for a more supportive, caring, and understanding father.
He is truly the rock to which I am tethered.
I could not have weathered any storms without him keeping me from blowing away.
 
He’s watching golf, now that we’ve finished Breaking Bad, which is maybe his only bad habit.
Watching golf.  Or maybe playing golf.
He just loves golf so much… I guess I forgive him for it.  Depending on my mood, that is.
BUT I should clarify the title of this post: I mean subpar in a golf way, not in a real world way.
Even though it’s not a term they use, I don’t think.
What I mean is that he’s better than average.
Or something like that.
I don’t know.  Stop looking at me like that.
So this cake… It’s spicy.
Spicy, sweet, and over-the-top.
It’s a rich chocolate cake with a silky cheesecake in the center, sandwiched with spicy strawberry-cayenne jam, frosted with a super smooth Italian meringue buttercream, and topped with cayenne-gianduja macarons.
 
Everything balances out very nicely:
deep, smoky chocolate
slightly sour, rich, thick cheesecake
spicy and tart strawberry
silkier than silky IMBC, which is super buttery and offsets the intense flavors well
slightly crispy, chewy macs with a hint of spice and gianduja (AKA nutella).
This is truly a celebration cake.  You can expect to see more macaron-topped cakes from me in the future.
Once I get my macs down perfectly, that is.

Kickin’ Chocolate Birthday Cake
 
Cayenne Gianduja Macarons
adapted from Jo the Tart Queen
ingredients:
for the first mixture:
70 grams egg whites
130 grams hazelnut flour
25 grams cocoa powder
150 grams powdered sugar
A few pinches cayenne pepper, depending how spicy you want the cookies
for the second mixture:
60 grams egg whites
Pinch cream of tartar
150 grams granulated sugar
30 grams water
directions:
Preheat oven to 320 degrees.
Line 2 baking sheets with parchment paper.
Process hazelnut flour, confectioners sugar, cocoa powder, and cayenne together in a food processor until all lumps are gone.
Place in a bowl and fold in the first measure of egg whites until the mixture is mostly combined; it will look crumbly and dry.
Make the second mixture.
Place the egg whites in the bowl of a stand mixer with the cream of tartar.
Place the sugar and water in a small saucepan.
Heat the sugar and water over medium heat while the egg whites are whipping.
When the sugar syrup reaches 320 degrees F, the egg whites should be at soft peaks.
Heat the syrup until it reaches 340 degrees F.
With the mixer running, slowly pour the syrup over the meringue.
Allow to whip until the meringue has cooled and is stiff.
Fold the first and second mixtures together until the batter is like lava.
Pipe out circles and leave to dry for 15 minutes.
Bake for 12 minutes, or until cookies lift cleanly off the parchment.

Miniature Cheesecake
adapted from Miette

ingredients:
1/2 pound (8 ounces) cream cheese, softened
1/4 cup sugar
1 egg
2 tablespoons half and half
1 teaspoon vanilla extract
directions:
Preheat oven to 350 degrees F and put a large kettle on to boil.
Wrap a 6-inch springform pan tightly in aluminum foil and lightly grease the inside; place inside a roasting pan.
Beat cream cheese until soft and fluffy; stream in sugar and beat until well incorporated.
Scrape the sides of the bowl and beat in the egg, half and half, and vanilla.
Pour into prepared pan.
Carefully pour boiling water around the springform into the roasting pan.
Bake for 1 hour and 20 minutes, until set and the center jiggles only slightly.
Allow to cool completely, then freeze prior to placing in the cake.

Strawberry Cayenne Jam
ingredients:
1 quart strawberries
1/4 cup sugar
1 teaspoon pectin (low or no sugar)
Few pinches cayenne pepper
directions:
Chop strawberries finely and place in a wide saucepan with the sugar, pectin, and cayenne.
Cook until thickened and jammy, about 10 minutes.
Purée if desired.


6-inch Chocolate cake
adapted from the back of a Hershey’s cocoa powder
ingredients:
1 cup sugar
3/4 cup plus 2 tablespoons flour
1/4 cup plus 2 tablespoons cocoa powder
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 egg
1/2 cup milk
1/4 cup oil
1 teaspoon vanilla extract
1/2 cup hot coffee
directions:
Preheat oven to 350 degrees F.
Grease 2 6-inch pans.
Whisk dry ingredients together.
Whisk wet ingredients (except coffee) together, then whisk into the dry ingredients.
Whisk in the hot coffee and pour into prepared pans.
Bake for 25 minutes, until a toothpick comes out clean.

Italian Meringue Buttercream
Same as here. 1/2 the recipe.

To assemble:
Place one cake on a cake plate.  
Spread with 3 tablespoons jam, then top with the frozen cheesecake.
Spread 3 tablespoons jam on the underside of the second cake, then place it jam side down onto the cheesecake.
Crumb coat with the buttercream.
Pipe 6 swirls on top of the cake, nestle in macarons that have been sandwiched with a little jam (3/4 teaspoon-1 teaspoon per cookie) or extra buttercream.
Serve at room temperature.

Food For Thought

The other day, someone politely informed me that I was a terrible writer, with a sneer and a laugh.
Um… Thanks?

I had no response.

I spluttered and mumbled.   
“Oh.”

I was saddened by the fact that I felt so bothered and upset by such breezy criticism.
I was sad that I was sad.

A cheery circle of life, no?

Anyways, this prompted me to sit down at my computer, poised and ready to write a beautiful post, one that would surely impress this person, should they ever bother to read my blog again.

I’ve been sitting here ever since.
Sort of. 
I have been dwelling on this, more than I really should be.
This post has lain blank, while my mind churns with all the things I want to shout say.

What better place to rant than here on my very own blog, on the ever-so-private internet?
Actually, I don’t want this to be private.  
I want it to be shared and sent around, all around, despite its intimate and private contents- I want it to make its rounds through people’s inboxes and readers.
This is because I want it to have some impact.
I want people to remember how others feel when they make them feel bad about themselves, because sometimes we just don’t think before we speak.
We all forget too soon how we have felt when we are sad and broken.

We’ve all been on both ends of a less-than-kind comment, and I won’t hear otherwise.

I mean, honestly, as if I needed yet another thing to pick at inside me.
Another sore place where I feel I’m not good enough- another place which I scratch until it bleeds, until I drown in all of that bloody sorrow and regret and self-loathing.
 
I struggle to grasp at confidence; I do my best to act it, even when I don’t feel at all confident within.
There are a few things that I am (was?) confident about, and one is my baking and my blog.
I toil here, probably more than you think, to create a product of which I can be proud.
 
I love my blog.  And I love my readers.
And frankly, I put enough work in here that I don’t really care if someone thinks I’m a terrible writer.  
 
But that doesn’t mean it doesn’t hurt when they tell me that.
To be honest, I’m not confident enough that it doesn’t make me doubt myself and my intentions.
I still came back to this blog with the thought that perhaps it’s not worth it, or not good enough, that people don’t like to read it.
I worried about this blog, and I worried about myself.  
For days.
 
So couldn’t that snide comment have been left to the wayside?

Because where exactly did it leave me?
Extra critical and picky over this blog.
Worried and worrying about what others think of me, not only myself, now, but also my blog.
Worried not only about how other bloggers receive me, but also my readers.
Self-doubting.
 
If we spent half as much time loving and appreciating as doubting and critiquing ourselves, don’t you think we- and this world as a whole- would be that much more satisfied and happy?

Wouldn’t we be that much more willing to love others?  To overlook their faults and embrace them?  
Don’t the majority of our criticisms and anger stem from our own sadness?

I lay in bed last night, feeling the cool air from my open window wash over me, wrapping around my ankles and resting in the crook of my elbows, flooding my nose and cooling the back of my throat, thinking about self-appreciation and love.

My thoughts- harboring hate self propagates; sow seeds of love and harvest happiness. 

The happier we are with ourselves- the more comfortable in our own skins- the brighter and happier our futures will be.

I want my future to glow- to shine- bright enough to blind.
That starts with loving myself.
That starts (anew) here.

Phew.  
To conclude this, I’m giving you the recipe for a cake that loves you back.
It’s raw, vegan, sugar-free, gluten-free, and much lower in fat than most other raw desserts.
I’ve swapped in low-fat coconut milk and coconut, reduced the amount of nuts used in the crust and filling, and added a vegetable.
Zucchini!  That magical veggie which we are all guaranteed to have too much of in the coming weeks, as the plants churn out hundreds of little green squashes.
 
This cake boasts healthy fats from coconut, avocado, and walnuts.
It gets all of its sweetness from bananas, mangoes, dates, and a touch of stevia.
It’s pretty, and it’s yummy.
It’s a hug for your stomach, which is pretty much as close as I can get to giving any of you a hug.

A Cake That Loves You Back
ingredients:
for the crust:
1/2 cup walnuts
1 cup coconut (I used reduced fat)
6 fat and juicy dried medjool dates, pitted
2 tablespoons coconut oil
for the banana layer:
2 bananas, peeled and chopped, then frozen
1 avocado
1 medium zucchini, peeled
1 scant cup of cashews, picked over and soaked in cold water for at least 2 hours
juice of 1 1/2 lemons
1 teaspoon stevia extract
for the mango layer:
2 cups chopped, frozen mango
1 cup light coconut milk
directions:
Make the crust: pulse all of the crust ingredients together in a food processor until they form a uniformly coarse meal. 
Press into the bottom of a 9-inch springform pan.
Make the banana layer: in a blender or food pro, puree the cashews until very smooth.
Add in the rest of the ingredients and puree until very, very smooth, at least a couple minutes.
Spread over the crust and chill in the freezer until set.
Meanwhile, make the mango layer: in a blender or food pro, puree the mango and coconut milk until a thick, sorbet-like mixture is formed.
Spread over the frozen banana layer, then chill again until the whole thing is set.
Before serving, allow it to sit at room temperature to temper, then cut and serve.

Raisin in the Sun

Or does it explode?
It’s hot, hot, hot.
Summer is coming.
The other day, it was about 90 degrees here in Ithaca, which translates to approximately 110 degrees on the inside of a certain little red Volvo.
Obviously, I raced home and did the one thing any sane person would do in the heat:
I turned on my oven.
My pup has never faired well in the heat, but as she ages, it becomes even more difficult for her.
Her lethargy is taken to a whole new level.
The other day, I took her on a walk (it was cool, but the sun was very strong), and, right in the middle of it, she sat down.
And refused to move.
She is no lightweight, either.  When a 95-100 lb chocolate lab makes up her mind to sit, your walking plans better change, pronto.
What ensued must have looked hilarious to passerby, but was most certainly not amusing for me.
We had stopped at the bottom of a shallow hill.
When Ginger decided she could take no more and wanted to go back, I realized her mortal mistake, but it would take her a few more minutes to come to the same realization.
We had to turn around and go UP the hill.  In the sun.  
Actually, she didn’t go up the hill.  She sat.
I pulled.  I pushed.  I wanted to carry her, but that would have been a feat perhaps to great for me.
I was sweating.
She was panting.
I was mad.
She sat.
When we got home, the poor old dear was panting so heavily, she sounded the way I do when I’m having a panic attack.
She slumped down on the cool stone floor of our porch.
I set a bowl of ice water near her and strategically placed a fan aimed at her belly.  
So lazy was she that she could not even get up to drink the water.
I had to push it closer so that she could half drink it by flopping over on her side.  
I mean, really?
Alright, ready for me to bring this back around to rugelach?
Ready?
We got Ginger when I was 7- my mom likes to say that we were puppies together.  
At that point in my life, I was still a good little devout Catholic and my family attended church every Sunday, without fail.
Um… Best part about church?  You always got doughnuts or cookies afterwards at the faith group that met on Sundays.
Ithaca Bakery, here in town, makes killer rugelach.
Rugelach that we often indulged in on Sundays.
(I know, Jewish cookies for Catholics.  Cookie love unites all!!)
Ithaca Bakery makes their rugelach in scrolls, like those shown, rather than the more traditional crescent shape.
When I first saw the rugelach in Dorie Greenspan’s book, I was very confused.
Those were not rugelach.
I did not trust these strange moon shaped cookies.
Surely they were not those that I knew and loved.
Turns out, they are.  Egads!
 
 
I find that the scroll shape holds the innards in far better than do the crescents, and it’s the shape I like, so I stuck with it.  
Feel free to shape the cookies into crescents if you so desire.
I slicked my dough with a thin layer of apricot jam, then a sprinkle of cinnamon sugar, and finally, a thin topping of walnuts and raisins.
You could do raspberry jam, or orange marmalade- or anything- run with it!
Same goes for the nuts.  Use whatever floats your boat.
I’m also thinking of some rugelach with sour cherries or golden raisins.  Yum.
The key to your filling not spilling out and burning the bottoms of your cookies to kingdom come is to be frugal with it.  Trust me.
 
With rugelach, it’s all about the shatteringly flaky pastry.  This pastry is seriously flaky, people.  Like, crumbs everywhere-unless-you-eat-it-in-one-go type flaky.
If that doesn’t convince you to make these, then I don’t know what will.
 
Anyways, me and Ginge enjoyed a few of these cookies together, just like the good old days.
She approves.  

Rugelach
for the dough:
from Dorie Greenspan
ingredients:
4 ounces cream cheese, cut into 1/2 ounce pieces
8 tablespoons butter, cut into tablespoon-sized pieces
1 cup all purpose flour
3/8 teaspoon kosher salt (she calls for 1/4 teaspoon of regular salt; I always prefer to use kosher or sea salt and I generally use pinches rather than measurements; here, a good, hearty 2 pinches will do.)
directions:
Place flour and salt in the bowl of a food processor and pulse to combine.  Sprinkle the chunks of cream cheese and butter over the top of the flour and pulse until a rough dough forms.  
Gently form dough into a ball and wrap in plastic wrap.  
Flatten slightly and refrigerate. 
to assemble:
ingredients:
apricot or raspberry jam
3/4 cup sugar mixed with 2 teaspoons cinnamon
2 handfuls of raisins
chopped walnuts
1 egg mixed very well with 1 half egg-shell full of water
directions:
Preheat oven to 350 degrees F.
Roll out your dough into a rectangle that is 1/8-1/4 inch thick.
Spread a thin, thin, thin layer of jam all over the dough.
Sparsely sprinkle a thin layer of cinnamon sugar all over the dough, then press a handful of raisins and walnuts over the sugar.  
Do not fill your dough too full with the fillings, because they will leak out and burn in the oven.
Roll up your dough rectangle tightly (roll starting with the long end of the rectangle, NOT the short, unless you want gigantic rugelach).
Cut into 1-inch wide pieces, and place 1 inch apart on a baking sheet.
Brush lightly with egg wash, and sprinkle more cinnamon sugar on top.
Bake for 10-12 minutes, until puffed, golden, and crispy.
